The cola combines with soy sauce, brown sugar, and other ingredients to make a sort of sweet and sour soy sauce. It’s really phenomenal! You might be tempted to skip the step where you thicken the sauce. This is such an essential step! That drizzled sauce makes the chicken tastes so, so good and it’s perfect over the white rice. I promise it’s worth the extra effort in this case! What’s in this recipe? Here’s what you’ll need to make this dish: four boneless skinless chicken breasts brown sugar white vinegar soy sauce Coca Cola garlic powder cornstarch water cooked white rice Can Diet Coke be used instead? No, use regular Coca Cola. You’ll need the sugar in the soda to reduce down and help flavor the sauce. Can generic cola or Pepsi be used? Yes, that substitution would work absolutely fine in this recipe! How to make this recipe: In a medium sized bowl, whisk together the brown sugar, white vinegar, soy sauce, Coca Cola, and garlic powder. This should be a thin sauce. 2. Place the boneless skinless chicken in the bottom of a Crockpot. Pour the sauce evenly over the chicken. Cover and cook on low for six hours, or on high for four hours. 3. In a small bowl, whisk together the cornstarch and water. This mixture will be slightly lumpy. 4. When the chicken is done, remove it from the slow cooker. Cover the chicken to keep it warm. Transfer the sauce to a saucepan and whisk in the cornstarch mixture. Bring to a boil and continue boiling until the sauce has thickened. 5. Serve the cooked chicken over steamed white rice. Drizzle the thickened sauce over the chicken and the rice before serving. Leftover instructions: Store individual servings in plastic containers with lids in the refrigerator for up to three days. Reheat in the microwave until hot. Freezer directions: Freeze individual servings for future lunches in freezer safe containers for up to three months. Thaw in the refrigerator overnight and reheat in the microwave until hot. Can brown rice be used instead of white rice? Absolutely! I have been looking for new things to do it chicken in the crock pot (especially that don't take cream soups) so this is perfect. Can I ask a stupid question – although the amount of cola used is negligible so wouldn't make much difference to my diet – does the cola have to be regular, or can Diet cola be used? Reply
Kelly Miller says April 12, 2013 at 8:08 pm In this recipe, I wouldn't substitute Diet soda. The sugar in the cola reduces it down to a thin syrup. I would be afraid the aspartame in the diet soda would take on a weird taste after slow cooking, too. Hope that helps! Reply
