07Sep2012 Crazy Cooking Challenge: BBQ Chicken Ranch Dip So I was so disappointed when I realized that the Crazy Cooking Challenge was over…. AND then I was so excited when Tina from Mom’s Crazy Cooking sent around an email that she had decided to continue! YAY! I’ve had so much fun participating in this fun challenge and I’ve met some really great bloggy friends along the way. This BBQ Chicken Ranch Dip is addicting! I actually had my 3 year old help me by measuring and dumping the cheese in the bowl, he loves any time I ask him to help in the kitchen. Use whatever chicken you have on hand, even leftover breaded chicken would go good in this dip. BBQ Ranch Chicken Dip 1 1/2 cups mozzarella cheese, shredded 1 1/2 cups monterey jack cheese, shredded 1 1/2 cups cheddar, shredded 1/4 cup heavy cream 1 cup ranch dressing 1 cup cooked chicken, cut up or shredded 3/4 cup bbq sauce Mix together shredded cheeses in large bowl. Add in heavy cream and ranch dressing. Stir to combine. Spread cheese mixture into a greased 8×8 baking dish. Bake at 400 degrees for 10 minutes. Remove from oven. Top cheese with chicken and then drizzle bbq sauce over chicken. Bake for an additional 10 minutes. Serve with tortilla chips or crusty bread.
