13Dec2011 Chicken Spinach Soup I’m totally into soup mode now that the weather is getting BITTER cold here at night in Amish Country, PA. I’m looking forward to Christmas and snow days! This was the perfect soup to kick off our winter mood and quite healthy, too. Silas absolutely loved it and so did we. It’s a great soup to have the ingredients on hand to just throw together and let it cook and smell up the house all day! Chicken Spinach Soup adapted from Finding Joy In My Kitchen 2 chicken breasts 1 tablespoon dried minced onion 2 cups chicken broth 3 garlic cloves, minced 1 cup water 1 teaspoon basil 1 can stewed tomatoes 1 can great white northern beans 1/2 package frozen spinach Dump all ingredients above in slow cooker on low for 7 hours or high 3 hours. Take chicken out and shred. Return chicken to slow cooker and continue cooking for an additional hour. Serve with some good crusty bread. YUM!
