I know we tend to think of cold veggie salads as a summer dish, but in reality gardeners would tell you the truth – cauliflower is a cold weather veggie. So don’t hesitate to bring this salad to a holiday function coming up! I really love the combination of flavors in this salad. The peas and the cheddar combined with the large bites of cauliflower in a homemade ranch dressing. It may seem simple, but trust me – this salad is perfect as-is! How many cups is 1 head of cauliflower? 4 cups. If you’re looking to save a bit of time, just buy pre-cut cauliflower florets equal to 4 cups, instead of the head of cauliflower. It’s cheaper to buy it as a whole head though! Can I substitute ready-made ranch dressing? I wouldn’t! The flavors in this really meld together wonderfully – I wouldn’t change a thing! How to make cauliflower salad: Chop one head of cauliflower into smaller florets and place them in a large mixing bowl. Add frozen peas and cubed cheddar cheese to the bowl. Add in mayonnaise and dry ranch dressing mix packet. Mix well and refrigerate overnight before serving. A perfect salad ready for when your company arrives! Cauliflower Salad Pro Tip: Don’t bother even thawing the peas! They will thaw in the fridge along with the salad and be perfect with the other ingredients. I love easy recipes like this one! Can cubed mozzarella cheese be used instead of cheddar? Sure! I like the strong flavor of sharp cheddar, but mozzarella cheese would taste great in this salad as well. How long does this salad last? Its recommended to consume this salad withing 3 – 5 days, as long as it’s properly stored in the refrigerator of course. I wouldn’t leave this mayonnaise-based salad out on the counter for too long without placing it back in the refrigerator for a while.
