Bubble Up Enchiladas By Kelly Miller • February27,2012 • Updated June 30, 2018 • 12 Comments1.2K147 Pin It I’ve made this recipe twice now and it has definitely become a staple in my menu planning. We usually have a mexican-type meal once a week and this one is close to the top of the list! The only thing I ever need to buy for this meal is the Grands biscuits (and most of the time I have a few cans in the freezer already). This would be easy to make in two 8×8 baking dishes and freeze one, though we LOVE the leftovers. This is a true kid/husband pleaser and it would be a great giving meal as well. Bubble Up Enchiladas Plain Chicken 1 lb ground beef 1 packet taco seasoning 8 oz can tomato sauce 10 oz can enchilada sauce 2 cups shredded cheddar cheese 1 can Pillsbury Grands rolls (probably would be fine with the other varieties of refrigerated biscuits also) Optional: sour cream, salsa, additional shredded cheese Cook ground beef in skillet until brown, drain off fat. Return beef to pan and add taco seasoning, tomato sauce, and enchilada sauce. Cut each Grands roll into fourths and add to pan along with 1 cup shredded cheese. Gently stir to combine. Pour into a greased 9×13 pan and bake at 350 for about 25 minutes. Sprinkle remaining 1 cup shredded cheddar on top and bake an additional 10 minutes until cheese is melted. Kelly says March 2, 2012 at 9:03 pm Carrie, the official word from Pillsbury is not to freeze them. I've heard they might bust open from freezing, though I've been doing it for years and I've never had one open. Leave them in the can and freeze like that, when you want to use them put the can in the fridge for about 4 hours and they're good to go! Reply
