In our family, pasta with tomato sauce is a main dinner. I love it because I know everyone in my family will enjoy dinner that night - which is a HUGE win for me! I pretty much always keep various kinds of pastas in my pantry along with Redpack Tomato Sauce - our family's favorite. You really can't beat a more simple and delicious dinner than that, am I right?

There are definitely nights, though, that I just want to switch up the routine a bit. In fact, lately I've been getting a little "burned out" so to speak on menu planning. If you've been a follower here on Mostly Homemade Mom for even a short while, you know how passionate I am about menu planning on a weekly basis. I have a BIG problem right now, however.

I live in a house of picky eaters.

I absolutely love counting on dinners like this Ziti Lasagna to be a winner every single time. Keep this recipe in mind, too, if you're bringing dinner to a function. Make up a pan and it will be gone in minutes, I promise!

Ziti Lasagna

Ziti Lasagna is the perfect weeknight dinner! Ziti pasta layered with meat sauce, ricotta cheese, and mozzarella cheese - total comfort food!

  • 16 oz box ziti pasta
  • 1 lb ground beef
  • 1 cup frozen chopped onions and peppers
  • 29 oz can RedPack Tomato Sauce
  • 2 teaspoons Italian seasoning, plus more for garnish
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 15 oz ricotta cheese
  • 1 egg
  • 2 cups shredded mozzarella cheese


  1. Boil a pot of water and cook ziti pasta according to package directions.
  2. Meanwhile, saute ground beef along with frozen onion and peppers until beef is brown and vegetables are tender. Drain and return to pan.
  3. Stir in tomato sauce, Italian seasonings, salt, and pepper. Simmer for 10 minutes.
  4. In a small bowl, beat egg. Stir in ricotta cheese. Spray a 9 x 13 inch baking dish with non stick spray.
  5. Spread half of meat sauce in bottom of dish. Top with half of ziti pasta, half of ricotta mixture, and half of shredded mozzarella. Repeat layers once more ending with mozzarella. Sprinkle additional Italian seasoning over mozzarella.
  6. Cover with foil and bake at 350 degrees for 25 minutes or until hot and bubbly. Remove cover and allow casserole to rest 5 minutes before serving.

I paired this Ziti Lasagna with a simple spring mix salad and Italian vinaigrette. For larger families, add some garlic bread as well and you could easily stretch this casserole for 12 servings. I just love versatile recipes like this one!
