Between school, church, family visits, and various holiday parties, the holiday season from Thanksgiving through New Year's is completely booked up for us. I should say "completely" because I have a few Saturdays on the calendar with nothing on it, but it will fill up very soon. I want to try and enjoy this season, maybe even doing a few surprise spontaneous things with the kids in December, so when my Grandmom called to see what was on the kids' wishlists I decided to have them actually make their Christmas lists. I know it's early, but Santa wants to be done with shopping as soon as possible!

The heart-warmer award goes to my oldest, Silas. I told them to think of 10 things to put on their list. After thinking of three, he hold me he was done because he couldn't think of anything else. Of course I encouraged him to think of a few more things and he completed the list, but I love how he's not obsessed with getting a mountain of presents.

The funny-guy award goes to Wesley, which I'm not surprised at in the least. Included on his list are "100 fijit spinners", "nirth gun", and "bulloons." Yes, balloons. Like a bag of balloons from the dollar store that he can blow up and throw around. You can't make this stuff up!

Needless to say, we're in full-blown holiday mode around here and I've been testing out some amazing recipes to share with you for your Thanksgiving and Christmas get-togethers. This recipe for Cheddar Spinach Mashed Potatoes is absolutely my favorite mashed potato recipe right now. The fresh garlic spinach flavors the mashed potatoes perfectly. You have to try this one!!

Cheddar Spinach Mashed Potatoes

These Cheddar Spinach Mashed Potatoes are decadent and delicious! Sauteed spinach in garlic with potatoes, cheddar, butter, and sour cream - a perfect holiday dinner side dish recipe!

ingredients


  • 6 - 8 potatoes, peeled and quartered
  • 2 tablespoons olive oil
  • 16 oz fresh baby spinach
  • 2 cloves garlic, minced
  • 1/2 cup butter
  • 3/4 cup sour cream
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup shredded cheddar cheese

instructions


  1. Place peeled potatoes in a stock pot, cover with water, and bring to a boil. Continue boiling for 15 - 20 minutes or until potatoes are easily pierced with a fork. Drain and transfer potatoes to the bowl of a stand mixer.
  2. While potatoes are boiling, heat olive oil in a deep skillet over medium heat. Add in spinach and garlic and saute until wilted, about 5 minutes. Remove from heat.
  3. Mash potatoes in stand mixer on medium speed. Add in butter, sour cream, salt, and pepper.
  4. Add in spinach mixture and cheddar cheese. Mix until well incorporated. Add additional salt and pepper to taste.

The ratio of butter and sour cream to potatoes in this recipe is absolutely incredible! Of course I love the addition of the green color in this dish as well - so festive for this Christmas season. Put this one on your "to-try" list this year!
