Crockpot Chicken and Wild Rice Casserole

Moms and Dads, we're almost there. We're in the home stretch. It's towards the end of May now and school will be out in a few short weeks. Wesley will be done preschool the Friday before Memorial Day and Silas will be done first grade the first full week in June. 

I'm delusional, though, if I think I'll be getting a break anytime soon. That's because we're moving!

I believe at this point I have a grand total of 2 boxes pack. Yes, literally, two. In my defense, I have cleared out the entire basement storage of things I wanted to donate or trash. I've pared it down as much as I can. I'm proud of myself that I saved all of our moving boxes from our previous move. So between those, and our joint addiction to Amazon Prime, we should be good to go!

But I still LOATHE packing.

This Crockpot Chicken and Wild Rice Casserole is the perfect dinner to just set in your slow cooker and have dinner ready when your family is ready. Needless to say, my slow cooker will be getting a huge workout between now and moving time!

Crockpot Chicken and Wild Rice Casserole

  • 6 oz box long grain and wild rice mix (unprepared)
  • 4 boneless, skinless chicken breasts (my affiliate link)
  • 8 oz sliced mushrooms
  • 10 3/4 oz can cream of chicken soup
  • 1 1/4 cup water
  • 1/4 cup real bacon pieces
Cooking Directions
  1. Pour dry rice into bottom of slow cooker, set aside seasoning envelope. Lay chicken over dry rice.
  2. Sprinkle mushroom slices over chicken. In a small bowl, whisk soup, water, and contents of seasoning envelope.
  3. Pour over mixture in Crockpot. Sprinkle bacon pieces on top.
  4. Cook on high for 3 hours or low for 5-6 hours or until chicken is cooked through.

This is pure comfort food for sure - your family will LOVE this dinner!

What is it about dinner that you can eat with your hands that makes meal time so fun? My kids honestly cheer whenever I serve them something that doesn't require a knife and fork. Silas and Wesley began their journey in scouting last week and we are already pretty excited about the opportunities for service and the skills that they will experience. 

With Reuben being an ACTIVE toddler right now, I was really dreading fall sports this year. When the boys played baseball this past spring, it was really hard following after Reuben as he wandered all over the fields for every practice and game the boys had. Not to mention with two boys on two different teams, 2-3 practices each week, and then 2 games each week, it was REALLY tiring and difficult. We were kind of searching for something after school they could be involved in, but with a less demanding schedule, and preferably indoors.

It's safe to say that meatballs are a favorite dinner around here. I pretty much always have a frozen bag of meatballs on hand in the freezer for a quick and simple last-minute meal that doesn't require very much mental effort on my part. When dinner time rolls around, most days my mental capacity has hit its limit so I thrive on meals like that - ha!

While meatballs are always a winner around here, I can certainly not say that same for anything incorporating vegetables. These kids can spot green food a mile away and most days want nothing to do with it. Silas and Reuben, my oldest and youngest, will most times just simply not even try it. Wesley will usually try whatever vegetable it is if we coax him into it, and a lot of times he actually does like it, or at least he says he does even though he winds up leaving most of it on his plate.

I can't win!

I'm not quite sure what happened to me this summer, but somehow I became a gardener. I used to absolutely despise being outside and working in the garden. It was a yearly chore that required me being out in the blazing hot summer sun, getting bit by mosquitos, and I honestly just wasn't good at it. 

I remember at our previous house in Ephrata, one year I was so impressed with myself because I actually weeded the whole front yard and planted geraniums and impatiens. I even finished it off with mulch, it actually looked great! But then the year after that I had Wesley and I was not about to be looking after a newborn and doing yard work, so the weeds overtook it again.

It's the most wonderful time of the year... :D

NO, I'm not talking about that jingle bell time of the year, I'm talking about back-to-school, of course! When I was in high school, there was a popular commercial that ran in August with the parents happily dancing through the school supply section of the store along with this song. I totally identify with that commercial now that I'm a parent myself!

Our boys have now been in school for a few days here in Pennsylvania and I'm happy to report that they've done so, so well. We are incredibly proud of them! We had some grumpy gus faces, of course, especially from Wesley when he realized school was beginning again. I finally heard him say yesterday, "Mom, I actually do like school." I knew he would! And Silas, likewise, is doing an excellent job as well.

I report about this every year and this year it is no different - packing school lunches is the BANE of my existence!! Most of the time I'm pulling something together quick for them from the fridge with half a sleepy eye open praying for the coffee maker to be finished. Poor kiddos! I needed a quick solution to encourage myself to make some lunches up ahead of time for smoother mornings in this house.

Silas and Wesley started back to school last week and this is the first year they are riding the school bus. Earlier this week as they were getting off the bus at the end of the day, the bus driver made it a point to tell me how nicely they listened and followed her directions on the school bus. She said she appreciated it very much because it sets a good example for the rest of the kids. Well, needless to say they earned a treat after school!
