Those of you who have been a follower of Mostly Homemade Mom for even a little while know how excited this makes me! In fact just yesterday when I was out shopping, I picked up a pair of fall mums that are just beginning to bloom. It’s by far my favorite time of the year! Not only do I absolutely love fall, you all know how much I adore my morning coffee. It’s sacred to me. Now that school has started, I’ve been trying to keep the boys on a fairly strict schedule for bedtime to give them enough rest for the full day of school they have ahead of them. The only problem is that I’m not doing it myself! I stay up to late getting things done, or just chillin’ with the husband, and in the mornings I simply can’t function without my coffee. This Pumpkin Biscotti uses delicious pumpkin quick bread mix to have you baking these treats up in a matter of mere minutes. My boys even gobbled these up as an after-school treat and asked me to sneak a small piece in their lunch boxes the next day! What a wonderful way to welcome fall! You can certainly switch out the milk chocolate for white chocolate chips instead – either would be absolutely delicious in this crunchy biscotti. I love how one batch makes a lot of cookies, so I’m planning on making up some gifts for the holidays with some biscotti, a cute coffee mug, and some great coffee as well. Stir in 1/2 cup chocolate chips.Turn dough out onto the counter and knead for a few minutes. Halve the dough and pat each out into an oval on a greased cookie sheet.Bake at 350 degrees for 35 minutes or until the edges are getting brown. Cool on stovetop for 20 minutes.Slice each oval into long strips. Place biscotti, cut side down, back onto the cookie sheet.Bake an additional 15 minutes at 350 degrees. Cool cookies completely.Place remaining 1/2 cup chocolate chips into a microwave safe bowl. Microwave at 20 second intervals until chocolate is melted.Drizzle over cooled biscotti. Allow chocolate to harden before storing or serving.
