Lately, I've been trying to be MUCH better with using up the things we have hanging out in the fridge. There were a few weeks in a row recently where I had to just throw several things away because it had gone bad before we had a chance to use it. In our house, this is mainly with fresh vegetables.

With some things, I will admit, it's hard to avoid. Spinach is one of those things. I think it's because it seems like it's only sold in HUGE bags! Thankfully, it's super cheap year-round in my area. But it always makes me feel so guilty when I've only used at most 1/3 of the bag, and then the rest gets thrown out. It's like I'm just throwing money in the trash can!

I do eat lots of fresh salads during the week, but I really just don't enjoy raw spinach. I love it cooked and I will often sneak it into lasagna or other pasta dishes, mostly unbeknownst to my family. I'm telling you one thing though, these Spinach Dip Stuffed Mushrooms will ALWAYS been on the menu if I have fresh spinach on my grocery list!

I was SO SO SO excited to start a little vegetable garden this summer. We've been renting for a few years now, and every spring I get motivated to clear out an existing garden bed to make room for some vegetable plants. And this year... I finally did it!

I'm definitely not the best gardener around, so I kind of flubbed my way through. I wish I could say it worked out well, but not so much. I planted 2 cucumber plants, 2 zucchini plants, 3 cherry tomatoes, 2 Roma tomatoes, 1 beefsteak tomato, and 1 hot chili pepper. They all started growing great, but after researched I realized we must have squash borer bugs that attacked not only my zucchini plants, but both cucumbers. I also seem to have issues with blossom end rot on my one Roma tomato plant. Despite the issues, I've been regularly harvesting delicious cherry tomatoes, chili peppers are almost ripe, and unfortunately only 2 zucchini. My cucumbers have given me nothing so far! :/

I'm not discouraged, though. I've learned several things to do for next year's planting that should help and avoid the same issues from happening again. One of the aspects of gardening I'm most surprised about, however, was getting a cute partner to help me - Wesley! He seems to be as into gardening and learning about gardening as I am, and of course I welcome the help. He loves going out with me in the morning to see if any tomatoes are ripe.

What is it about rainy summer days that just make you want to do absolutely nothing? We've had a few days in a row here in Pennsylvania that start out sunny and warm, but quickly turn to clouds in the afternoon with showers or thunderstorms. My afternoons are my time to get work done while Reuben is napping, but this weather is killing my productivity!

I'm not even going to get into the state of my house right now. Ok, well maybe I will. Reuben's new thing is finding tissues or paper towels and picking little pieces off of them, throwing the little pieces all over the floor. Honestly, the pieces just stay there until I can't take it anymore and get the vacuum out. And then he inevitably finds another tissue or paper towel to tear apart. Weird kid.

The big boys go to summer camp next week and I'm absolutely looking forward to it! Of course, they're looking forward to it, too. It's a day camp with a "wet and wacky" theme - lots of water games and activities. Plus, they take them boating, fishing, hiking, etc. I used to LOVE summer camp when I went in middle school, plus we've been getting on each other's nerves so I think a break during the day will be good for ALL of us. ;)

Reuben turns two years old in October, but for us, the terrible two's have started a little early. In the morning when he wakes up, he MUST have his juice or milk cup ready and waiting for him or he has a melt down. During the day, he MUST watch his daily episode of Puppy Dog Pals and Sesame Street or he has a melt down. Don't try feeding him anything on a spoon, he MUST do it himself in his high chair making an absolute mess. And then, even if you manage to do all of those things attempting to make him happy during the day, when 5pm rolls around, he follows me throughout the house crying for no apparent reason. 

This child needs to start talking with real words!

Reuben is, of course, a brat because he doesn't act this way for anyone else. Only for the lucky four of us that live with him. Gahhh!!

I have to say, we are absolutely having a blast this summer in the Mostly Homemade Mom house! Since we had our big vacation in May, we're pretty much staying put these summer months - but that doesn't mean we're not planning on fun, that's for sure. 

My boys are obsessed with science and I LOVE it. They had seen a few science experiment videos on Facebook as they look over at my phone while I'm scrolling through and that gave me a good idea. The week before school let out, I went over to Pinterest and pinned all sorts of fun and easy backyard science activities, and then bought all the supplies at the dollar store. Our summer activity supplies are stored in a box on our kitchen counter. Every week day, in order for us to do a fun science activity after dinner, the boys have to complete two review worksheets and read for at least 15 minutes. I have to say, this plan has worked like a charm! Plus, you can't beat more learning activity as an incentive for even more reading and learning!

Having all the supplies already bought and ready to go has been a huge timesaver as well - plus it serves as a visual incentive for them to get the work done they need to do in order to have some fun time later in the day. Win-win!
