Can I just say officially that I’m SO GLAD it’s finally summer around here? I mean, we’ve had quite a few hot and humid days, but it’s now officially summer and I’m really excited! We look forward to spontaneous days spent outside in our yard and having family over for BBQs all season long. Don’t get me wrong, I love planning just as much as the next Pinterest-addict, but there’s something to be said for those “lazy, crazy, hazy days of summer”! Some days we like to hang outside, kids playing with their bikes, maybe the sprinkler will come out, and we’ll search the fridge for some veggies and meat to throw on the grill. Other days, we all pile into the van on a whim and take a drive. I honestly don’t like to plan things more than 3 days out in the summer – we just don’t know what mood will strike us next! This past weekend, we surprised the kids with a trip to Sam’s Club, which they are always THRILLED about. That’s not an exaggeration, they absolutely love trips to Sam’s Club for two main reasons: the free samples and the “toy aisle.” To get these boys excited about shopping is a feat in and of itself these days! We also took a stroll through the seasonal section and I spotted this incredible Member’s Mark Mesh Grill Basket and Lid. I absolutely could not wait to try that out on our grill at home and I was not disappointed! This grill basket is perfect for any grilled vegetable or grilled saute recipe you might be wanting to try – I highly recommend this Grilled Vegetable Salad for starters! Transfer vegetables to a grill basket. Secure lid.Place basket on grill over high heat, about 8 - 10 minutes, turning half-way through, until vegetables are tender. Remove from grill and cool.Slice kernels off of corn cobs, chop asparagus and tomatoes (they will be squishy), and place into a mixing bowl. Add green onion, spring mix, couscous, and dressing. Toss to coat well. Serve immediately on Member's Mark paper plates; refrigerate leftovers. I cannot even begin to tell you how incredible the flavors in this salad were! I was very surprised that just a little bit of olive oil, salt, and pepper was all fresh veggies need when they’re cooked this way – the grill does the rest! Of course we never come home from a trip to Sam’s Club without our “usuals”: laundry detergent, fabric softener, paper towels, and toilet paper. This time though, with all of our random summer events and BBQs, I also picked up paper plates, plastic cups, and clear cutlery. I don’t want to be stuck in the kitchen doing dishes this summer, I want to be outside enjoying my family!
