Chocolate Chip Cookie Frappe

This delicious Chocolate Chip Cookie Frappe is the perfect way to cool down on a hot day! Coffee, ice, chocolate creamer, chocolate chips, and whipped cream on top - yum!!

When I think of summers when I was a kid, I think HEAT. We lived in Philadelphia and it was always quite a few degrees hotter there than elsewhere in the state. My mom always said it was because all the buildings so close together kept the heat in. I don't know if that really was the reason, but we were not one of the lucky few families I knew of that had central air conditioning. We had this HUGE clonking air conditioner in the wall of our dining room and, running that thing, cost my parents a small fortune. Needless to say, most summers we just dealt with the heat!

With my own kids now, I look at them and I think, "They don't know how good they have it!" Wesley (6) would seriously spend all day long outside, despite the heat. Silas (8) complains the entire time. That one takes after me, unfortunately! Either way, most days are spent outside with them while they ride their bikes, play with sidewalk chalk, or just run around. On days where it's too hot to even think, I make up a delicious frappe to drink and cool down while spending time outside with the boys.

This Chocolate Chip Cookie Frappe is so easy to throw into a blender, pour into a glass, and you're off! There's absolutely no need to get in the car and drive to your favorite coffee shop when you can keep the ingredients on hand at home and make these up for yourself whenever the mood - or the heat - strikes you!

  1. Place all ingredients, besides Reddi-wip®, into a blender. Blend until smooth and adjust sweetness according to your own taste.
  2. Divide between two glasses. Top with Reddi-wip® and serve immediately.

The amount of the ingredients that I listed above are really a guideline, feel free to adjust according to your own taste as well. I just really love being able to create some of my favorite coffeehouse flavors at home with just a few ingredients and at a fraction of the cost, too!

Can I just say officially that I'm SO GLAD it's finally summer around here? I mean, we've had quite a few hot and humid days, but it's now officially summer and I'm really excited! We look forward to spontaneous days spent outside in our yard and having family over for BBQs all season long. Don't get me wrong, I love planning just as much as the next Pinterest-addict, but there's something to be said for those "lazy, crazy, hazy days of summer"! 

Some days we like to hang outside, kids playing with their bikes, maybe the sprinkler will come out, and we'll search the fridge for some veggies and meat to throw on the grill. Other days, we all pile into the van on a whim and take a drive. I honestly don't like to plan things more than 3 days out in the summer - we just don't know what mood will strike us next!

This past weekend, we surprised the kids with a trip to Sam's Club, which they are always THRILLED about. That's not an exaggeration, they absolutely love trips to Sam's Club for two main reasons: the free samples and the "toy aisle." To get these boys excited about shopping is a feat in and of itself these days! Question for you friends: how often do you send thank you cards or gifts? I'm being honest here when I say I'm bad at remembering to send Thank You cards.   1. Allow ice cream to sit at room temperature until softened slightly. Scoop into a large mixing bowl.
  2. Sprinkle half of coffee cake chunks onto ice cream and gently fold. Sprinkle remaining coffee cake and walnuts and gently fold in again until well mixed.
  3. Cover bowl with plastic wrap and return to the freezer for at least 2 hours. Scoop ice cream into serving dishes and top with drizzled caramel and additional coffee cake crumbs. Store leftover ice cream in the freezer.

Meatball Cheeseburger Bites

  • 24 Cooked Perfect Homestyle Meatballs
  • 1 package of 24 party-style potato dinner rolls
  • 6 slices cheddar cheese, quartered
  • 4 small tomatoes, sliced
  • 24 bread & butter pickles
  • ketchup & mustard, toothpicks


  1. Place frozen meatballs on a cookie sheet. Bake at 350 degrees for 15 minutes.
  2. Separate party rolls and slice each in half created a top and bottom "bun." Place the bottoms of the rolls on a second cookie sheet and top each with a quartered slice of cheese. Bake next to meatballs in oven an additional 5 minutes or until cheese is melted and meatballs are cooked through.
  3. Assemble cheeseburger bites by topping each bottom bun with a cooked meatball, ketchup, mustard, tomato slice, pickle, and top bun. Secure with toothpicks and serve immediately.

I used the typical cheeseburger toppings for these bites, but of course you can tweak them and serve each person's cheeseburger bite just the way they prefer. Ripple potato chips were the perfect addition alongside these delicious mini cheeseburgers!

We have a few big purchases coming up and, in an effort to save as much money as possible, I've been really stalking the grocery sales and coupon deals to stock up on the lowest prices possible. Besides our house payment, food is our next biggest monthly expense and, with three growing boys, we go through a lot of meat! My plan is to buy in bulk the next time I see a cheap chicken sale and make up a lot of freezer bags with chicken and marinade - to save the step later on when we're ready for dinner.

The first time I had ever even heard of rhubarb was the first summer Paul and I had moved to Lancaster County. I grew up in the city and I guess rhubarb just isn't something you see in city supermarkets. We actually were really lucky growing up and we had a large back yard, side yard, and front yard. My parents grew quite a bit of vegetables most summers in the backyard - mostly tomatoes, cucumbers, and radishes. But never rhubarb! 

Seriously, the stuff is ALL OVER up here in Amish Country! Pretty much every roadside produce stand I stop at has bunches of rhubarb, very reasonably priced too, I might add. A sweet member of our church congregation gifted us a bunch from their garden so I thought it was about time that I cooked up something with it myself. Boy am I glad I took the plunge!

This is the time of the year when we do a lot of grilling in this family. And by a lot of grilling, I mean A HECK OF A LOT. Dinner time with 3 kids who are all hungry is a recipe for melt-down time. I absolutely love having fresh chicken or beef marinating in the fridge to just hand over to Paul to cook up on the grill. 

While the main dish is covered with him grilling, the side dishes are up to me and for some reason that's the part that usually stresses me out! Lately we've been doing a lot of grilled corn since it's been on sale lately around here, and we've also done a few nights of grilled asparagus. Some sweet members of our congregation gifted us some fresh asparagus from their garden and it was absolutely fabulous on the grill - and I'm one that's not a huge asparagus fan. 

Our schedules are crazy right now though, and while I pick up at least two or three servings of fresh veggie side dishes for us each week, any more than that sometimes just gets wasted because it goes bad before we can cook it. Just the reality in this house! So I really like to have side dish ideas that are easy to pull together and use shelf-stable ingredients to always have on hand.
