I firmly believe you can never have enough coffee cake recipes, wouldn't you agree? Traditionally, coffee cake is sweet, but not nearly as sweet as dessert cake. Just enough sweetness to accompany a cup of tea or, of course, coffee. Because of the dialed-down sweetness, they are great for breakfast, brunch, dessert, even snacks. Most have a crumb topping, instead of traditional cake frosting, so they can easily be packed into a lunch box as well. What's not to love?
We have several occasions coming up later this spring and into the summer that are perfect for serving coffee cake - this would be particularly perfect for Mother's Day breakfast or brunch. Baked goods and coffee - now that's the perfect Mother's Day to me! Then in the summer, I like to bake up a few breakfast treats to take with us on vacation. Does anything sound more perfect than a piece of this Banana Coconut Coffee Cake with a view of the ocean first thing in the morning? Heaven!
When it comes to breakfast and brunch, if I have over ripe bananas waiting to be used on my counter, I usually bake up some banana bread. This time, I decided to try to incorporate those dark, sweet bananas into a coffee cake. With a banana coconut streusel topping, this really takes breakfast to a whole new level!

Banana Coconut Coffee Cake
A sweet banana cake topped with a banana and coconut streusel, perfect for breakfast or brunch.

In a large bowl, sift together flour, sugar, baking powder, and baking soda. Using a pastry blender or two knives, blend in 5 tablespoons of the chilled butter. Set aside.
In another bowl, mash half of the banana with the back of a fork. Whisk in creamer, egg, and vanilla until well blended.
Gently pour in wet ingredients into dry ingredients, stirring until just moistened. Spread evenly into a greased 9 x 9 square baking dish. Bake at 375 minutes for 20 minutes or until a cake tester comes out clean.
Remove cake from oven, but leave oven on. For the topping, melt the remaining 3 tablespoons butter. In small bowl, mash the remaining 1/2 banana and whisk in melted butter. Stir in coconut. Spread evenly over warm cake.
Bake an additional 7 - 10 minutes or until topping is just starting to brown. Cool completely before serving.
This is completely optional, but you could serve this delicious coffee cake with slices of fresh banana or even real whipped cream as well. The fresh fruit and coconut really give this coffee cake a tropical flavor twist that everyone will be sure to love!
