Our oldest kiddo, Silas, turned 8 years old last month. Whenever I make treats to possibly photograph and post the recipe for you all, the boys taste test and tell me what they think. I know the recipe is a real winner when they ask, "Mom, can you make this for me for my birthday?" So, when Silas' birthday rolled around, I had a few ideas of past desserts he's loved in my mind as possibilities. You could imagine my surprise when I asked him what he wanted me to make for his birthday dessert this year. Mini cheesecakes.
It's been YEARS since I've tried a new mini cheesecake recipe.
I really have no clue where he came up with that idea, but I went with it! I'm not going to argue with the kid, I LOVE cheesecake!
We actually planned a small play date with some of his friends, they came home with us after school one day and they all spent the afternoon trading Pokemon cards. These kids are OBSESSED with Pokemon right now! They really aren't allowed to trade at school, so it was nice to give them some time outside of school together. Of course we had the family over for pizza and dessert later the same night, and literally everyone raved about this mini cheesecake recipe!
Feel free to leave the cherry pie filling off, I did this for the first batch and they tasted great. I honestly prefer the pie filling on though, it gives it just a little bit extra to the cheesecakes.

Ok, indulge me for a minute. Raise your hand if you're a working mom? Raise your hand if you're at stay at home mom? Ok, now can we all just agree that being a mom in both capacities is HARD?? There are seasons of life where certain tasks and jobs are much easier than others. As a work-at-home mom of 3 kids, one of which is a toddler who is home with me all day, I definitely have the temptation to order dinner out. The mental and physical energy it takes to plan out dinners, get the grocery list together, find time to go to the store (preferably without kids), prepare and cook the meals - I'll admit, some weeks I just struggle!
I will tell you though, the simple task of cooking dinner for my family makes me feel really good about myself. It may sound silly, but it's so true! Last week in particular, I was really feeling in the mood to get takeout Chinese food so I set out to try and recreate one of our favorites here at home. I kept it simple while my last grocery trip though Target: chicken thighs, rice, pineapple, onion, and my favorite Soy Vay Veri Veri Teriyaki sauce.
You guys - this dinner was SO GOOD! Moist, flavorful, and that sauce is out of this world. Top it with some fresh sliced green onion!

Crockpot Teriyaki Chicken Thighs
Skinless bone-in chicken thighs slow cook with onion, pineapple, and teriyaki sauce and served over steamed rice.
prep time: 15 MINScook time: 4 hourtotal time: 4 hours and 15 mins
1 onion, peeled and sliced into rings
20 oz pineapple chunks, drained
2 tablespoons olive oil
8 - 10 bone-in chicken thighs, skin removed
1 cup Soy Vay Veri Veri Teriyaki Marinade & Sauce
steamed brown rice
sliced green onion
Place onion and pineapple in the bottom of a slow cooker.
Heat oil in a large skillet over medium high heat. Cook chicken 4 minutes on each side to brown. Place over onion and pineapple in Crockpot. Pour sauce over chicken. Cook on high for 4 hours.
Serve chicken over steamed rice with additional warmed teriyaki sauce and green onion.
One of the reasons why I really love this recipe is the cost - it's SO affordable and it makes plenty for our very hungry family of 5. This would easily work with any type of skinless chicken that's on sale, and actually the cheaper bone-in cuts work even better in the slow cooker because of the moisture it retains. I definitely recommend serving this with extra teriyaki sauce drizzled on top - yum!
I've tried different kinds of store-bought teriyaki in the past, and Soy Vay Veri Veri Teriyaki is by far my favorite. I LOVE the sesame seeds in the sauce! It's truly wonderful as both a marinade and a sauce, just the right consistency. Plus, you can't any easier than opening up the bottle and pouring it on your dish! Friends, my mornings have been SO BUSY lately! Two kiddos need to get dressed, brush their teeth, eat breakfast, pack their school bags, and make lunches. Paul is in class two mornings out of the week, and then of course in the office the other mornings, so getting the kids ready and out the door on time is all on me! Add a crazy teething toddler to the mix and, needless to say, many mornings my breakfast is a cup of coffee.
I know, I know - that's certainly not ideal!
So I set out to make a quick, delicious, protein shake to get me through the absolutely crazy mornings in our family. I will tell you, too - if you've been searching for the right recipe for the same reasons, you can stop right here! I absolutely love the chocolate peanut butter combination in desserts, and in this chilled shake it works amazingly well.
I start with unsweetened almond milk in my blender. Then add cocoa powder, powdered peanut butter (easily found in most grocery stores), protein powder, Whole Earth SweetenerTurbinado Raw Cane 50, and ice. I like to top it with some real whipped cream and one or two sugar free miniature peanut butter cups.
It truly tastes like I'm indulging in a heavy dessert, but in reality it's giving me the energy I need to get through the morning. You simply have to try this one!

I was walking through the grocery store and I spotted that very familiar can of chocolate syrup and it just HAD to come home with me! The sight of that Hershey's chocolate syrup can reminds me of my Grandmom. She always had an opened can in the refrigerator. I remember her using it to make me chocolate milk. It makes the BEST chocolate milk ever! The syrup is about the same consistency of the bottle variety, and I'm not sure if it's any different than the bottled kind either, but something about the can makes it taste SO much better!
