Roasted Asparagus Parmesan with Barber Foods Stuffed Chicken Breasts

September 26, 2016
This post is sponsored by Barber Foods.

This Roasted Asparagus Parmesan recipe is so easy! Fresh asparagus tossed in olive oil, garlic salt, and Parmesan cheese and baked in the oven. The perfect side dish for dinner!

Roasted Asparagus Parmesan

Fall has officially begun, here in Central Pennsylvania. The high temperature as far as my app will let me go, is in the 70's. I let out an audible "AAAHHHH" on Saturday when I got in the car with the boys. Fall is my favorite, but of course, you knew that already.

Something that becomes SO HARD in the fall though is making a weekly menu plan and sticking to the plan. The nicer weather, and the fact that the buggies have mostly all left until next year, make me want to DO ALL THE THINGS. I'm serious! This past weekend, we took the boys and my adorable nephew to a local farm that has activities and play areas for kids. This upcoming weekend we have a Great Pumpkin 1st Birthday Party planned for Reuben, and then a square dance on Sunday at our church.

And that's just in one week!

Recipe for Roasted Asparagus

I'll be honest, I'm usually so tired from all the fun activity that we opt for getting delivery. I mean, when you're literally out all day, who wants to stand on your already tired legs and cook over a stove for an hour or so? Not me, I tell you! These are the nights when I'm SO thankful to have something easy to throw in the oven, a great veggie side dish that takes less than 5 minutes to prepare, and every has a delicious, filling dinner. That's what a call a success, wouldn't you?

Roasted Asparagus Parmesan

Fresh asparagus spears tossed in olive oil, garlic salt, and grated Parmesan cheese and roasted in the oven.

Prep time: , Cook time: , Total time:
Yield: 4 servings

1 lb asparagus spears
2 tablespoons olive oil
2 teaspoons garlic salt
1/2 cup grated Parmesan cheese

  • Trim 1/4 inch off the ends of each spear of asparagus. Place trimmed spears into a lined cookie sheet.
  • Drizzle with olive oil, turning to coat. Sprinkle half of garlic salt and Parmesan over asparagus.
  • Turn spears over and sprinkle remaining garlic salt and Parmesan.
  • Bake at 350 degrees for 15 minutes. Cool slightly before serving.

  • Oven Roasted Asparagus Parmesan

This seriously the BEST way to serve asparagus - YUM!

    Roasted Parmesan Asparagus

I served this alongside one of my favorite main dish shortcuts - Barber Foods Broccoli & Cheese Stuffed Chicken Breasts. I usually pick a few boxes up in the frozen food aisle during my grocery trip through my local Giant Food Store. I just love that in a short amount of time, I'm able to serve my family some delicious chicken straight from the freezer - leaving me with plenty of time to take care of all the other time-consuming tasks of a busy school night!

Roasted Asparagus Parmesan with Barber Stuffed Chicken

Preparation is so simple - just remove from the pouches and place frozen raw stuffed chicken breasts onto a cookie sheet, pop in the oven preheated at 375 degrees, and they're done in around 35 - 40 minutes! For this dinner, I cooked the chicken first, then reduced the heat to 350, and baked the asparagus. I covered the cooked stuffed chicken breasts with foil to keep the heat in. Dinner was SO yummy - my kids asked for seconds, score!!

    Caramel Apple Pie Fudge

This stovetop Caramel Apple Pie Fudge is the perfect treat to welcome fall! Apple pie filling, crushed gingersnap cookies, and white chocolate chips in a caramel sauce - this dessert makes a great gift, too!

Caramel Apple Pie Fudge Dessert Recipies

I've been blogging here at Mostly Homemade Mom for over 5 years - I can't believe it's been that long already. Over the past 5 years, I've been so fortunate to "meet" some wonderful people. I'm proud to be a part of such a talented community of bloggers!

One of my dreams when I became serious about this blogging idea, was to work for some of my personal favorite food brands. Getting the chance to write recipes for these brands and actually get paid to do that seemed like such a cool thing! I've said it before, but I feel like I have to pinch myself sometimes that this is my actual job!

One of the communities I've become a huge part of is Collective Bias. Through their talent and connections, I've been able to work with pretty much ALL of my bucket-list companies, some more than once, too! They even hosting the first blog conference I attended - SoFabU On the Road in NYC. I realized on my way home from that day, I've been seriously missing out by not attending all these years! The learning experience and connections I made with fellow bloggers with really priceless.

Caramel Apple Pie Fudge Dessert Recipes

I'm going to ask you to stay tuned next week - our amazing SoFab bloggers are all coming together and posting delicious, mouth-watering APPLE recipes to share with you. Next Friday I'll be posting a link up to all of their recipe posts as well - you are NOT going to want to miss that!

My apple contribution is this Caramel Apple Pie Fudge - I kid you not, this will be my go-to Christmas gift this year. I'm going to warn you - between the 4-minute pot stirring and beating the batter with a hand mixer, your arm WILL get a workout! But I assure you, one bite and you will realize how worth it the sore arm will be, promise!

    Crockpot Salisbury Steak Recipe

Sometimes when these boys get home from school, I wonder if they ate their lunch and snack at all. They come home absolutely famished every single day! I'm really happy that they get a chance to expend all that energy on learning, playing at recess, and practicing their social skills with classmates and teachers. From the minute they come home they're asking for a snack and a drink, all the way up until dinner time.

These Mini Cranberry Pumpkin Breads are perfect for parties this fall, housewarming gifts, and bake sales! With pumpkin, spices, and dried cranberries, this recipe makes 6 mini loaves - keep one for your family and give the rest away!

    Mini Cranberry Pumpkin Bread

What is it about fall that makes everyone want to get together and have fun? It's such a beautiful time of year. We're still in the midst of high heat days, which in our area is in the mid-80's. I know for some of you in the south that's not too bad, but it is for me! I'm ready for cool weather. And I am SO ready to turn off the central air conditioning in our house and open up all the windows for some fresh air. Doesn't that sound wonderful?

Just yesterday I was driving around our area running a few errands and I was so pleasantly surprised at how many roadside stands already had truck loads of pumpkins! When Paul and I were first married, it was our dream to move out of the city of Philadelphia and live here in Central Pennsylvania. We had both grown up in the city and then when we were first married, we both lived and worked in the city. We were so ready to move!

    Mini Cranberry Pumpkin Bread Recipe

Sometimes I drive around our town now and I have to pinch myself that this is where we live! I know I'm biased, but I truly believe there is no better place to live in the fall. Of course I've already begun dreaming up some really yummy pumpkin ideas with all the beautiful orange and white pumpkins I've been spotting on the side of the road.

I was able to find those mini foil loaf pans at a local grocery store outlet, but I've seen then at most major food stores. Grab strips of wax paper, burlap ribbon, and baker's twine and these make the perfect gift! You can also freeze them by wrapping in wax paper, and storing them in zip top freezer bags. I'm planning on making a double batch for the holidays ahead - I can't wait!

Mini Cranberry Pumpkin Bread with Craisins

I absolutely LOVE using Ocean Spray® Craisins® Dried Cranberries in my baking, and even in my snacking. Their taste, texture, and color gives them that unique "zing" that everyone loves. I love buying in bulk at Sam's Club, but since Craisins® Dried Cranberries aren't available at some Sam's club locations, I'm excited that I can stock up at my local Giant Food Store.

    No Bake Tiramisu

    September 13, 2016
This is a sponsored post written by me on behalf of Tyson Foods, Inc. All opinions are entirely my own.

This No Bake Tiramisu recipe is super easy! Simple frozen pound cake, cream cheese, whipped cream, and brewed coffee make this dessert the best tiramisu recipe ever!

    No Bake Tiramisu Recipe

One of my favorite things in the world to do is to have people over to our house for dinner. I feel like we were in the midst of babyhood and toddlerhood for so long that we really never had dinner with other friends very often. It was only on the rare occasion that we pre-planned for my parents to babysit that we were able to meet up with friends for dinner.

    No Bake Easy Tiramisu

And let me tell you, it was NEVER at our house! It's just craziness to have friends over to visit when little kids live there. I mean, cleaning ahead of time is a total waste of time because the house will be a complete mess again later the same day. Are the kids going to stay there during the visit or do you have a babysitter for them? And then forget the stress of actually having something tasty for dinner! Who has time for that, am I right?!

    No Bake Easy Tiramisu Recipe

There are definitely times, though, when friends would pop over unannounced. Probably not the best idea with families of little children, but it did happen to us a few times. I will say, I sure wish I had this recipe for No Bake Tiramisu back then to throw together in minutes! Slices of Sara Lee pound cake drizzled with brewed coffee, layered with sweet cream cheese and whipped cream, and dusted with cocoa powder. This one is perfect for a potluck as well!

    No Bake Tiramisu

Tiramisu no bake cake made with pound cake slices, cream cheese, whipped cream, coffee, and baking cocoa.

Prep time: , Cook time: , Total time:
    Yield: 12 servings

16 oz Sara Lee frozen pound cake, thawed
16 oz cream cheese, softened to room temperature
1/2 cup plus 2 tablespoons sugar, divided
    2 teaspoons almond extract
    8 oz whipped cream, thawed
    1 cup brewed coffee, cold
    2 tablespoons cocoa powder

  • Slice pound cake into 30 even slices, set aside.
  • In a medium bowl, beat cream cheese, 1/2 cup sugar, and almond extract until creamy. Gently fold in whipped cream.
  • In a separate small bowl, stir together coffee and 2 tablespoons sugar.
  • Assemble cake by laying 15 pound cake slices in the bottom of a 9 x 13 baking dish, overlapping slightly as needed. Drizzle 1/2 cup of coffee over slices.
  • Spread half of cream cheese mixture over slices. Repeat a second layer using remaining pound cake slices, coffee, and cream cheese.
  • Dust top of cake with powdered sugar. Refrigerate until ready to serve.

  • No Bake Tiramisu Cake Recipe

I promise you, your guests will be singing your praises after serving them this easy tiramisu, and they will have NO idea how easy it was to prepare! It'll be our secret! ;)

One of my favorite things to do to be ready for unexpected or last minute dinner guests is to have some great ready-made frozen foods stocked in my freezer. Just pop these in the oven or microwave, pair it with a dessert like this No Bake Tiramisu above, and you're all set. Check out the current ad circular for Giant and Stop and Shop for the week of 9/9 through 9/15. This week there's a special promotion to buy $20 of participating Tyson frozen fully cooked chicken, Jimmy Dean frozen breakfast, and Sara Lee frozen dessert items and save $5 instantly. No Bake Tiramisu with pound cake

During my grocery trip, I grabbed Tyson Any'tizers® snacks, Tyson frozen chicken nuggets, Jimmy Dean frozen breakfast croissants, and a Sara Lee frozen pound cake - to use in my No Bake Tiramisu. I really trust the Sara Lee brand because they offer a variety of wholesome products for every need. Great tasting products and fun to eat, too!
