These Pumpkin Gingerbread Brownies are the perfect addition to your Christmas cookie tray this year! Brownies made with pumpkin, ginger, and molasses, frosted, and topped with a gingerbread man cookie - so cute!
One of my favorite things to do as the Christmas season draws closer, is to make a list of all the different cookie recipes I'm planning on baking. We have a lot of people on our gift list, and I honestly love giving out personalized Christmas cookie trays to family and friends. We all have those people in our lives who are special to us and we want to give a gift to them during the holidays that lets them know how much we treasure their friendship. I will admit though, it can be a daunting task selecting special gifts for so many friends!
Instead, I make an assortment of my favorite homemade cookies interspersed with my favorite Pepperidge Farm® cookies. I have high hopes every year of making delicious gingerbread man cookies with the boys, and I fail every time! On the few occasions that I actually had time to do cut out cookies, they tasted horrible or were hard as a rock. I opt for Pepperidge Farm® Ginger Family cookies every year instead - they are absolutely adorable and delicious as well. My kids love them, too!
Inspired by our favorite Ginger Family cookies, I created these Pumpkin Gingerbread Brownies. These are so fun! A pan of pumpkin gingerbread, topped with chopped pecans, chocolate chips, and frosting with a Pepperidge Farm® Ginger Family cookie "standing" in the frosting snow. It's easy to get the kids involved in these delicious Christmas themed brownies!!

Pumpkin Gingerbread Brownies
Gingerbread brownies with vanilla frosting and gingerbread cookies as garnish.

1/4 cup butter, softened
1 cup molasses
2 egg yolks
1 whole egg
1/4 cup pumpkin puree
1 teaspoon vanilla
1 1/2 cup flour
2 1/2 teaspoons cinnamon
2 teaspoons ground ginger
1 teaspoon baking powder
1 teaspoon baking soda
3/4 teaspoon pumpkin pie spice
1/4 teaspoon salt
1/2 cup chopped pecans
1/2 cup miniature semi sweet chocolate chips
1 can vanilla frosting
15 Pepperidge Farm® Ginger Family cookies

In the bowl of a stand mixer, blend butter, molasses, egg yolks, and eggs. Add in pumpkin and vanilla, beating well.
In a medium bowl, stir together flour, spices, baking powder, baking soda, and salt. Gradually add flour mixture to pumpkin mixture just until moistened.
Spread batter into a well greased 9 x 13 baking dish. Sprinkle with chopped pecans and chocolate chips.
Bake at 350 degrees for 20 - 25 minutes. Cool completely.
Frost brownies and cut into 15 small squares. Top each square with a standing gingerbread cookie and sanding sugar. Serve immediately or package for gift-giving.
The base Pumpkin Gingerbread Brownies are so tasty and pair perfectly with the sweet frosting and sanding sugar. I'm planning on packaging individual brownies in treat bags for sweet treat gifts to give to friends and family!
