I'm in love with the name "monster cookies" but I realized as I was making them, I had absolutely no idea why they are called that! In researching monster cookies (I love my job), I'm coming to the conclusion that they are named "monster cookies" for two main reasons: they're big, and they combine every favorite cookie into one. Chocolate chip cookies, peanut butter cookies, and oatmeal cookies - my favorite. If that doesn't make you want to buy the ingredients right now and try them, I'm not sure you're a cookie person!

Back to school time is here, though, and I'm brainstorming some great snacks that are packable and portable. Unfortunately, oversized cookies just don't make the cut! My mom took my kids out to buy new lunch boxes yesterday and I was very pleased that they picked ones that were a little on the larger side. I like packing healthy snacks along with one or two sweet treats and with the added bulk of a cooler pack, sandwich, drink, and utensils - I had a hard time fitting everything last year in Silas' lunchbox!


Lunch Box Easy Monster Cookies



These regular-sized monster cookies are the perfect size to pack with your kiddo to school. Plus, there's no need to have a wide variety of ingredients to put them together - simple cookie mix pouches make these a super easy one-bowl recipe. I plan on keeping the ingredients on hand for after school snacking, too! If your school is peanut free, you can easily substitute the peanut butter cookie mix pouch with a sugar cookie mix pouch instead - they taste amazing that way, too!



Lunch Box Monster Cookies

An easy snack or dessert cookie using cookie mixes, oatmeal, and chocolate candies.

Prep time: , Cook time: , Total time:
Yield: 5 dozen cookies

Ingredients:
17 oz package chocolate chip cookie mix pouch
17 oz package peanut butter cookie mix pouch
1 1/2 cups quick cooking oats
1 cup butter, softened
3 eggs, beaten
2 cups M&Ms
Instructions:



  • In a large bowl, stir together cookie mixes and oats.
  • Add in softened butter and eggs. Stir well with a large spoon until a thick dough forms.
  • Fold in M&M's. Drop by rounded tablespoonfuls onto lined cookie sheets. Flatten cookies slightly with the back of a drinking glass, if desired.
  • Bake at 375 degrees for 11 minutes. Cool completely on wire racks and store in an airtight container.

    These are insanely good with ice cold milk - we haven't been able to stop eating them since I made them!
