Mid August is full fledged back to school time in our area, and this was a time of both excitement and nervousness for me when I was a teacher. Excitement, of course, over meeting a new group of kids and getting to work making goals for them and meeting, and hopefully exceeding, those goals during the school year. Nervousness though, over how much back sliding my students experienced over the summer break. And now as a mom of school age kids?

I was happy to report to you earlier this week that I am proud to say we met our goal of completely the library reading program this year. But I KNOW there are skills that my boys, Silas especially, will need to re-learn in September. To a certain extent it's a normal occurrence among students of all ages, but it doesn't ease my worries that's for sure.

Over the past two weeks, I've really been trying to encourage a short amount of time every day for drawing, coloring or writing at the table. Because let's face it - that first day back to school where they have to sit at desks, rather than running around all day long, is going to be a rude awakening!

A good breakfast in the morning before school, something yummy in their lunchbox at noon, and a tasty snack after school while giving them some time to be creative, is great for their body and mind. Apple Cider Syrup


A recipe for syrup using apple cider, brown sugar, cinnamon and nutmeg for serving drizzled over waffles, pancakes, or ice cream.

Prep time: , Cook time: , Total time:
Yield: approximately 12 servings

1/2 cup sugar
1/2 cup brown sugar
1 tablespoon cornstarch
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon salt
2 cups apple cider (found in the refrigerated section of the store)
1 tablespoon lemon juice
prepared waffles or pancakes
  • In the bottom of a heavy saucepan, mix together sugar, brown sugar, cornstarch, and spices. Stir in apple cider and lemon juice.
  • Heat over medium heat stirring occasionally until starting to boil.
  • Allow to boil for 1 minute, stirring constantly, until thickened.
  • Remove from heat and allow to cool slightly. Serve warm over waffles or pancakes, refrigerate the leftovers in a sealed jar.
