Sweet angel food cake layered with chocolate pudding, whipped cream, and a rich coffee drizzle. The perfect no-guilt dessert!




Our 5-month-old Reuben is the most adorable baby. And of our three boys, he's definitely the happiest baby! He quite literally smiles and laughs all day long. Until he's hungry or tired of course. Then monster baby comes out to play. Yikes!

Around 7 weeks old, he slept straight through the night. Like 8:30 pm to 8:00 am, without needing to wake up to eat. This went on until approximately one month ago. When he decided that he did indeed need to eat in the middle of the night. I should have realized this was coming when he was already growing out of 3-6 month clothing. So pretty much I get up around 3:00 am. And every. hour. after. UGH.





There is just not enough coffee!

My morning coffee is sacred to me right now. I don't think I could function for the rest of the day without it!  Actually, I'm quite certain I couldn't. No one warns you that when you become a parent you have to be "on" the second you wake up in the morning. Somebody's thirsty. Somebody's hungry. Nobody wants the same thing. And everything is all of a sudden SO LOUD. And then you and your spouse get the brilliant idea to add a new baby to the mix. 

But at least I get my precious coffee every morning. And that is definitely something I'm happy to enjoy, especially when the night has been insanely long!





This dessert is one I was inspired to create from an old trifle recipe from a church cookbook I found from the 1960's. Don't you just love how retro this is?! A coffee drizzle, chocolate chips, and International Delight Simply Pure Vanilla Creamer all make this amazing, light dessert absolutely delicious and take it to a whole new level!



Skinny Mocha Trifle

Ingredients
  • 1 store-bought, prepared angel food cake
  • 3 oz package instant chocolate pudding
  • 1 2/3 cup skim milk
  • 1/3 cup International Delight Simply Pure Vanilla creamer
  • 1 cup hot water
  • 2 tablespoons instant coffee granules
  • 8 oz light whipped topping, thawed
  • 1/3 cup mini chocolate chips
Cooking Directions
  1. Prepare pudding with skim milk and creamer as directed on package. Place in refrigerator to set.
  2. In a small bowl, whisk hot water and instant coffee. Allow to cool to room temperature.
  3. Slice angel food cake into cubes and place half into the bottom of a large glass trifle dish. Drizzle half of the instant coffee over cubed cake.
  4. Spread half of the pudding evenly and then half of the whipped topping evenly over layers. Repeat with remaining ingredients.
  5. Sprinkle chocolate chips over top. Refrigerate until ready to serve.






Coffee along with a coffee-flavored dessert. Keep away boys, Mommy needs a break! And no, you cannot have a bite.

...Ok. Maybe just one little bite. :)

I honestly use this creamer every morning and it tastes absolutely fabulous in my "precious" AM coffee!
