Just Like Cracker Barrel Coleslaw

A copycat version of Cracker Barrel's famous cole slaw - enjoyed at home! Perfect for your next BBQ or picnic!

We're HUGE fans of going out to eat in this family. In fact, it would be safe to say it's one of our favorite things to do together. Which is why when the new baby arrives in October, I'm a little scared! It might be *just a little* difficult with an infant and two little boys in tow.

When Silas was a baby, we tried going out to eat a few times, but it was always one big exhausting disaster. I feel like I had to bring so much stuff "just in case" that it would have been easier to just stay home - ha! It took me 45 minutes just to get ready to go out to eat. Of course at the time, I'm not sure we even tried a kid-friendly restaurant - which is one of the many reasons why we LOVE Cracker Barrel.

Not only do the boys absolutely love the food there, they are always super nice to our kiddos when we go! I really love that they can have fun too while eating out and not worry about being... well... kids! And boy oh boy do I now realize how quickly they are out of the baby/toddler phase - they are both great when we go out to eat now. Proud mommy, here!

Cracker Barrel's current menu offerings have my mouth watering - I'm telling you!! Their Buttermilk Fried Chicken looks SO incredible. I also spotted a new Strawberry Shortcake dessert, along with a Strawberry Iced tea that I can't wait to try. I almost can't decide if the main dishes or the sides are my favorite! Sweet potato fries, corn, coleslaw... I love them all! 

Just Like Cracker Barrel Coleslaw
  • 2 bags coleslaw mix
  • 1/2 cup mayonnaise
  • 1/4 cup milk
  • 1/4 cup buttermilk
  • 4 teaspoons lemon juice
  • 1 teaspoon vinegar
  • 1/4 teaspoon salt
  • 1/4 teaspoon celery seed
Cooking Directions
  1. Empty coleslaw mixes into a large mixing bowl. In a smaller bowl, stir together remaining ingredients. Pour over coleslaw mix and stir to combine well. Refrigerate at least two hours before serving.

This recipe MIGHT be enough to just tide me over until our next family trip to Cracker Barrel!

Before leaving we love visiting Cracker Barrel’s Retail Store on the way out. They have such cute and unique products for the home and products for the kitchen. One of these days I will splurge and buy us a set of those amazing rocking chairs for us!

Spicy Garlic Sriracha Dip

This delicious dip has a kick from the garlic and sriracha sauce and is perfect for fresh veggies and breaded appetizers and dippers!

Ok, I'm coming clean about my previous opinion of a certain hot sauce that my husband is absolutely obsessed with.

I've actually discovered in recent years that I really love the flavor of traditional hot sauce, the kind that goes on hot wings. And I think you've seen evidence of that with various recipes I've shared with you here!

The husband though absolutely needs to have sriracha sauce on hand at all times. I will admit, I never tried the stuff until today. Despite him begging me and trying to explain how much flavor it has, nope - never tasted it. Mainly because he likes things scorching hot, and I absolutely can't handle food that is too spicy. So if he thought it was spicy, that meant it was WAY over the top for me.

It's just that I don't enjoy food that literally hurt your mouth after eating it. That's not enjoyable for me at all. Sometimes when he makes chili or spaghetti he'll slip in some hot peppers or a little hot sauce, and I can taste it right away. And MAN do I get ANGRY! That usually means I have to go back in the kitchen, hungry, and pull something together for me and the boys to eat.

Needless to say, he doesn't pull those stunts very often.

But I wanted to create a dip that would go perfect with Farm Rich's Crispy Dill Pickles and Breaded Mushrooms, along with some fresh veggies. And I just couldn't get a spicy dip out of my head! Let me tell you - I was TOTALLY right! 

As I'm mixing this dip together, I'm smelling the garlic and hot sauce... and I just had to taste it. Seriously. SO good! And the spicy garlic flavor goes so well with the breaded appetizers - this is a great recipe to pin for your next party!

Spicy Garlic Sriracha Dip

  • 2 cups mayonnaise
  • 2 tablespoons sriracha
  • 1-2 tablespoons dried, minced garlic
  • 3/4 teaspoon Worcestershire sauce
  • 1/2 teaspoon curry powder
  • fresh vegetables
  • Farm Rich Frozen Snacks
Cooking Directions
  1. Prepare Farm Rich Frozen Snacks in oven according to package directions.
  2. Meanwhile, in a medium bowl combine mayo, sriracha, garlic, Worcestershire sauce, and curry. Cover and refrigerate.
  3. Serve with fresh cut veggies and Farm Rich snacks.

We just simply could not stop snacking on this yummy dip!

I love how Walmart has a huge selection of Farm Rich's various frozen snacks in the frozen food aisle. I can't wait to try some of the other varieties next!

Cheddar Chicken Crescent Rolls

Cooked chicken combines with ranch dressing mix, cream cheese, & cheddar and rolled up in buttery crescent rolls - an awesome weeknight dinner that leaves perfect lunch box leftovers!

I'm not one to usually make dinners that are bite sized like this one. It usually entails me sitting at the kitchen table, rolling, dipping, breading, whatever it is for what seems like an hour as I kill my back hunching over the table. And in my current state of what is essentially a soccer ball where my stomach usually resides, let's just say it's extra difficult. 

I remember last week I make a "bite-sized" dinner that I just knew was going to taste amazing to share with you all. Despite the back breaking rolling of these bites, I was determined to make it work. I didn't even taste them before taking a load of photographs before anyone was allowed to touch them.

And they were awful. 

I'm more of a skillet dinner, one-pot-wonder, casserole type of cook. Especially during the busy week. 

But I have to tell you, these little Cheddar Chicken Crescent Rolls are well worth it. And to be honest with you, these took WAY less time preparing than, say, homemade meatballs. I buy those frozen, don't judge.

I really, REALLY like that the yummy chicken filling is tucked inside crescent rolls - they're my favorite type of roll! This recipe makes 16 roll ups, which I find absolutely perfect for leftovers to tuck into your kids' lunchboxes the next day!

Cheddar Chicken Crescent Rolls

  • 3 boneless skinless chicken breasts, cooked
  • 8 oz cream cheese, softened
  • 1 packet ranch dressing mix (dry)
  • 2 cups shredded cheddar cheese
  • 2 cans refrigerated crescent rolls
Cooking Directions
  1. Place cooked chicken breasts, cream cheese, and ranch dressing the bowl of a stand mixer. Turn mixer on to fully shred the chicken and combine the other ingredients well.
  2. Once mixed, removed bowl and stir in shredded cheese.
  3. Separate each crescent triangle and spread a generous amount of chicken mixture onto each triangle and roll up.
  4. Place filled rolls on greased cookie sheets. Bake rolls at 350 for 20 - 30 minutes or until rolls are golden brown.

I served these with steamed green beans and applesauce - a truly kid friendly meal!

How I Keep on Budget on Vacation!

Paul and I have been married since 2007 and in those 8 years we've gone on vacation only about 4 times. Since I was using my prepaid card to budget monthly food expenses, I gave it a try budgeting for our vacation excursions and you know what? This isn't a post where I've compiled a bunch of tips for you to follow. Nope, it's really very simple:

Decide on an amount of money your family is comfortable spending on dining out and activities, load that amount of money onto your prepaid card, and only use the prepaid card while you're on vacation.

That means no getting out your checkbook or credit cards, be diligent with only using the prepaid card to help keep you on your set budget.

For me and Paul, of course, it's the food. We sit at the beach in the morning (him grumbling, he's not a beach person) and then we decide where to eat at night. We were there for a full week, so there were some nights that I bought groceries and prepared dinner at the rental house to save some money. But our favorite thing to do while at the beach is EAT! You knew that. ;)

The kids favorite thing to do, besides the beach of course, was all the fun boardwalk activities - mini golf, rides, and arcade games. If I could give a second tip, it would be to do some research BEFORE going on vacation and pick some cheap or free excursions in the area as well. Our favorite free outing was a trip to the zoo!

It was SO much easier deciding on things we could afford, and things we couldn't afford, because I was only looking at one dedicated account for the funds. If not for the prepaid card, we would have spent money out of several accounts - and spent WAY too much on vacation.

I like the Green Dot® Reloadable Prepaid Visa® Card for budgeting our vacation because I really like knowing they have easy to understand fees. To me, being able to budget effectively on vacation and have the consumer protections of the  Visa Clear Prepaid program was worth the small fee. If we had used our bank debit account and overdrawn unknowingly, we would be paying way more in overdraft fees - there are NO overdraft fees to worry about when using the Green Dot® Reloadable Prepaid Visa® Card. Since the card is part of the Visa Clear Prepaid program, we also had Visa's Zero Liability* fraud protection, just in case our card was lost or stolen - which definitely put my mind at ease! The small monthly fee covers all that, plus your day to day activities including purchases, point-of-sale cash back, and in-network ATM withdraws. Depending on how you choose to load funds onto the card, other fees may apply.

So that's my big recommendation to you to budget for your vacation needs financially - decide on an amount your family is comfortable spending, load it into a Green Dot® Reloadable Prepaid Visa® Card, and ONLY use the funds on that prepaid card while on vacation.

Apple Cinnamon Smoothie

Apples, apple juice, frozen bananas, milk, and cinnamon combine for this fabulous tasting smoothie that's nutritious for breakfast or for an after-school snack!

Breakfast is my favorite meal of the day.... when we're eating out at a restaurant. When we're home, it's frustrating and annoying as the chief cook in the family because I have to figure something out everyone wants to eat all while being still groggy from sleep and under-caffeinated. 

At now six months pregnant, I also have a third little bugger who is up and kicking at the early hours of the morning and wanting mommy to eat something. A sign of things to come in a few months? Oh, I'm sure it is. 

I usually go for oatmeal or yogurt for the boys in the morning. It's so easy to prepare either breakfast for them and the best part is - they love both! I have to admit, I love yogurt and oatmeal also, but I think adding a yummy smoothie for me just makes this a perfect breakfast.

Quaker has come up with these nifty NEW Quaker® Real Medleys® Yogurt Cups that all you need to do is add cold milk, stir, and you have a delicious yogurt and multigrain granola breakfast ready to eat with real fruit and crunchy nuts. It thickens as it sits - so cool! My favorite is the Apple Cinnamon flavor, which is why I came up with this delicious Apple Cinnamon Smoothie to go with. 

No added sugar and simple, whole foods ingredients in this smoothie make it perfect for breakfast and after school snacks. Silas actually asked me how sugary it was because he couldn't believe it was that sweet from just the juice, apples, and banana! Of course the whipped cream is optional, but it makes this drink really fun.

Apple Cinnamon Smoothie

  • 2 apples, peeled, cored, and sliced
  • 1/2 banana, frozen
  • 1/3 cup milk
  • 1/3 cup no sugar added apple juice
  • 1-2 ice cubes
  • 1/4 teaspoon cinnamon (plus more for sprinkling on top)
  • Optional: real cream whipped cream
Cooking Directions
  1. Drop apples, banana, milk, juice, ice cubes, and cinnamon in a blender. Blend until smooth. Pour into glass and top with whipped cream and additional sprinkle of cinnamon. Makes 1 smoothie.

This makes such an awesome breakfast - I'll actually be excited to whip this up in the morning!

Real Medley's tagline is "Crunchy. Cool. Yum." and I would have to wholeheartedly agree - especially with the yum part! I've honestly seen nothing like this before for breakfast food options at the grocery store.
