Slow Cooker Pulled Chicken Tacos

I'm not sure what started my love affair with shredded chicken in the slow cooker, but I'm not asking questions! It's just so easy and quick to throw some boneless, skinless chicken in the slow cooker, top it with some sauce, and turn it on. Quick and easy!


It sounds circular to say that Crockpot meals are easier and quicker than other meals, but they really are - trust me! With a regular dinner you're rushing to get food done and on the table, maybe fumbling to try and find the recipe you need, all the while crazy kids are running through your kitchen and you're starving and in a bad mood. Sound familiar?








Unfortunately, all too familiar for me. Most nights that start like that, end up with me yelling and the kids in time out. Not a night I'd like to relive, thank you very much!







Slow cooker meals make the cranky dinner hour SOOO much more relaxing and enjoyable. I get to prepare the meal when it's a much more relaxing time of day. Then when the dinner craziness erupts, we can just dish out and sit down to eat together. Now how much better does that sound?!


These Slow Cooker Pulled Chicken Tacos start with chicken cooking in Campbell's Apple Bourbon Pulled Pork sauce, gets shredded, and is served inside a soft taco topped with cheese and cole slaw. Your entire family will rave over this one!



Slow Cooker Pulled Chicken Tacos
Ingredients
  • 5-6 boneless, skinless chicken breasts
  • 13 oz package Campbell's Apple Bourbon Pulled Pork sauce
  • 1 cup Monterey Jack shredded cheese
  • 1 cup prepared cole slaw
  • 12 soft taco shells
Cooking Directions
  1. Place chicken in the bottom of a Crockpot. Pour slow cooker sauce over chicken.
  2. Cover and cook 8 hours on low or 4 hours on high. Remove lid and shred with two knives.
  3. Place shredded chicken evenly inside each taco shell. Top with a sprinkling of cheese and a tablespoonful of cole slaw.






These tacos were a huge hit at our house and I LOVE that it's the main dish and side dish in one - super fun!
