One of the things I’m most proud of myself for doing this past year is making library visits with the boys a habit in our family. This summer, I signed Wesley up for our local “1,000 books before Kindergarten” challenge. That’s right, our goal is to read a whopping 1k books with him before September 2016! We’re in the 200’s right now so I’m hopeful we can do it! There are just so many benefits to getting kids interested in reading as early as possible and I have to say, the road has been long with Silas in particular! Up until this year, he really wasn’t interested in books for more than 5 minutes at a time and usually when I would ask him if he wanted to read with me, his answer was “Not right now.” Wesley on the other hand, was always into books and reading – even as a baby. He loved looking at the colors and the shapes and sitting with us while we read. I have to say though, personally I LOVE the library. It’s calm, peaceful, and I’m surrounded by some of my favorite things in the world: BOOKS! It helped Silas loads to see how excited I was to visit the library, and he now gets excited about our trips, too. Our local libraries offer so many fun activities for kids: toddler and preschool story times, summer “camps”, Lego club, we even went a few weeks ago to a library “block party.” They had bought brand new wooden blocks for the children’s library and held a block party for the kids to play with them and hear stories read to them about shapes. It was a lot of fun! On our last trip out, Wesley picked a book called “Ugly Pie” by Lisa Wheeler (*affiliate link). I was in a rush to get out and get my beloved iced coffee, this was one of the weeks where I just let them pick some random books that caught their eye. We read it that night before bed together and what an endearing book! It’s about a bear who has a taste for “ugly pie” and goes around to his friends homes collecting the ingredients. Our mouths were actually watering by the end of the book and to our surprise as we turned to the last page – there was a recipe for homemade ugly pie from the author herself! So of course the boys begged me to make it, and here she is! We all agreed that yes the ingredients were ugly, but this pie is absolutely delicious! No ratings yet Print Pin Rate Course: DessertCuisine: AmericanKeyword: fruit pie, ugly pie Prep Time: 15 minutes minutesCook Time: 1 hour hourTotal Time: 1 hour hour 15 minutes minutes Servings: 8 servings Calories: 1422kcal Author: Kelly Miller Ingredients▢ 9 inch pie crust thawed according to package directions▢ 6 cups Granny Smith apples peeled, cored, and sliced▢ 1 tsp lemon juice▢ 1/4 cup molasses▢ 5 tbsp flour▢ 3/4 cup brown sugar▢ 1/2 cup white sugar▢ 1 tsp cinnamon▢ 1/2 tsp nutmeg▢ 3/4 cup raisins▢ 1/4 cup walnuts finely choppedFor crumb topping:▢ 1/2 cup flour▢ 1/4 cup butter cold▢ 1/4 cup brown sugar InstructionsIn a large bowl, mix together apples, lemon juice, and molasses. Add in flour, brown sugar, white sugar, cinnamon, and nutmeg. Toss to combine well. Stir in raisins and walnuts.Place pie crust into a deep dish pie plate. Fill with apple filling.For topping, place flour, cold butter, and brown sugar in a deep bowl. Using a pastry cutter or two knives, combine until you have coarse crumbs. Sprinkle evenly over pie.Cover with foil and bake at 400 degrees for 40 minutes. Remove foil and bake an additional 20 minutes. Cool completely before serving.
