Garlic Butter Grilled Mushrooms

Whole white mushroom skewers, with a garlic butter and basil sauce, grilled to perfection! 




This year, I have seriously been OBSESSED with grilled dinners! I've been trying to eat better meals high in protein and low in sugar and carbs - grilling is absolutely perfect for that type of thing! Last week I shared Grilled Lemon, Garlic, & Oregano Chicken, Grilled Citrus Herb Salmon, and then earlier in June I shared Tangy Grilled Chicken Drumsticks with you. I can't get enough!

Ok, confession time.

Our big gas grill has been broken since last summer.

If you can believe it, I've been able to grill these amazing meals on my indoor George Foreman - man that thing is a workhorse - and no they're not sponsoring this post in any way, haha! I just love that thing, if for the clean-up alone. I just pop the dirty grill plates in the dishwasher, and we're back in business!

We are definitely in the market for a new gas grill, though. I'd love to not have to cook in batches. Actually, I'd love to just hand it all over to Paul and have him do all the cooking on grill night! 

I really cannot describe to you how awesome these mushrooms are off the grill. They are juicy, buttery, garlicky, and SO good. Paul was telling me next time I definitely need to make WAY more, so I'll probably double the recipe!






Garlic Butter Grilled Mushrooms

Yield: 4 skewers
Ingredients
  • 2 pints fresh mushrooms
  • 1/4 cup butter, melted
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon dried basil
Cooking Directions
  1. Wash mushrooms well and stack them on skewers (I was able to fit 5 per skewer).
  2. In a small bowl, stir together butter, garlic salt, and basil.
  3. Place skewers on grill over medium high heat and drizzle/baste garlic butter over the top.
  4. Turn skewers after 5 minutes and drizzle/baste the other side, grill for another 5 minutes.
  5. Allow skewers to rest about 2 minutes before serving.






These were seriously bursting with flavor, yum!!

Menu Plan 6/30



Well, we had quite an exciting day yesterday. Let me fill you in on a little something that God has been doing in our lives lately...



Paul is now a pastor! He felt God calling him into the ministry about 3 years into his undergraduate theology degree, and we were pretty shocked that as soon as he graduated in May - he was already blessed with an appointment at a church very close to us! Yesterday was his first Sunday preaching there and I have to say, the congregation was a huge blessing to us. So many happy, smiling faces welcoming us - what a true picture of the body of Christ! Please pray for him, and for us, as we begin this new chapter in our lives and for this amazing ministry in our community. :)

This week's menu plan is below, although I've been trying new recipes and cooking up a storm since I'm home now for the summer! Basically, this plan is my backup in case any new ideas don't pan out... (I.E. dinner is inedible)!

Grilled Lemon, Garlic, & Oregano Chicken

Chicken marinades in mayo, lemon juice, garlic, and oregano and then grilled to perfection. This is THE BEST marinade!




I'm not sure there's anything easier to do in the summer than grill chicken. But I have to say, this recipe does take about 5 extra minutes of thought to prepare the marinade. Believe me, I know those 5 extra minutes are dicey when the kids are constantly asking you for popsicles, juice, to put their bathing suit on, to take their bathing suit off, to yell at their brother for being mean, to wipe off their hands for the billionth time... you get the idea!

Sometimes my mind is spinning so fast, all of a sudden my stomach is growling and I realize I haven't eaten anything - here comes Mommy in a BAD mood!

Seriously though, dedicate those precious 5 minutes to stirring together this AMAZING marinade. This would be a great one to freeze along with the chicken, it will marinade in the fridge as it thaws. It's creamy, tangy, and SO good!


Grilled Lemon, Garlic, & Oregano Chicken
adapted from Taste of Home Grill It, Summer 2013

1 cup mayonnaise
1/4 cup lemon juice
2 tablespoons white wine vinegar (you could substitute apple cider vinegar as well)
1 tablespoon garlic powder
1 tablespoon dried oregano
6 boneless, skinless chicken breasts

In a medium bowl, combine mayo, lemon juice, vinegar, garlic, and oregano. Pour 3/4 cup of marinade in a ziploc bag (refrigerate remaining marinade). Add chicken. Squeeze out air as much as possible before sealing bag. Toss and turn the chicken in the bag to make sure pieces are coated in marinade. Place bag in refrigerator for at least 3 hours, overnight is ideal. Remove chicken from ziploc bag, and discard. Grill chicken on your outdoor grill over medium heat for 5 minutes, turn and baste with reserved marinade, and grill for another 4-9 minutes or until chicken is done. If using and indoor grill (I used my George Foreman) grill chicken for 6-9 minutes or until chicken is done, basting half-way through.





Oh man, this chicken was SO good! I served it with Garlic Butter Grilled Mushrooms on skewers, be sure to check back tomorrow for that amazing recipe!

Grilled Citrus Herb Salmon

No time to marinade? No problem! Salmon fillets get topped with fresh cilantro, thyme, lemon and lime zest, garlic, and olive oil and then grilled. An easy and stunning summer dinner!




I'm usually not the one doing the grilling in this family. Ok, maybe I'm NEVER the one doing the grilling in my family! It doesn't mean I can't, I just don't have to! When we're at home, Paul does the grilling and when we're at my parents, my dad always does the grilling. 

Come on guys, I do ALL of the other cooking, I can take a break - can't I?

See, even this super easy grilled salmon isn't completely a break for me because I prepare the salmon all the way up until it goes on the grill! Hey, I just realized how unfair that is...




Grate Chef sent me several of their best grilling products to try on our next grill night. Their products are pretty ingenious and they worked amazingly well! First, I tried the Stainless Steel Grill Wipes. 

Please tell me I'm not the only one who has never cleaned the outside of a grill before!




I honestly expected to use WAY more elbow grease to get a shine on that baby, but those wipes worked awesome! Just look at that gross-ness, yuck!




And I have to say, the Flare Down was awesome! This works really well when you're cooking high fat foods (burgers, in my case) that drip down and can cause flares and then burn your food. 




Their Grill Wipes are pretty awesome, too. As you clean the blackened, burnt on gunk (or as my husband and dad loving to refer to it as "flavoring") it actually oils the grates so that your food won't stick. This was great to use before cooking fish!




Speaking of fish, this was probably the easiest salmon recipe I've ever made and it tasted absolutely out of this world good! The citrus herb spread takes all of about 5 minutes to stir together, then you just spread it on the fillets, and give it to your guy to grill. Dinner - done!


Grilled Citrus Herb Salmon

4 medium salmon fillets
2 tablespoons fresh cilantro, chopped fine
2 tablespoons fresh thyme leaves
2 tablespoons olive oil
3 garlic cloves, minced
zest of 2 lemons
zest of 2 limes
addtional lemon slices, if desired

In a small bowl, combine cilantro, thyme, olive oil, garlic, lemon zest, and lime zest. Spread evenly on top of all four salmon fillets. Grill over medium heat about 10 minutes, or until fish flakes easily with a fork. Serve with additional lemon slices.





I really love how quick this can be thrown together, and yet have it taste like you just ordered it at a restaurant for a fraction of the cost! Total score, am I right?!

A long LONG time ago, the summer of my freshman year of college, I took a road trip with some of my friends to Ocean City, MD. It was pretty much the first time I had gone to the beach without any members of my family and it was WONDERFUL! 

The hotel we stayed at had a snack & drink bar by the pool and whatever food or drink you ordered would be delivered directly to your pool chair. I was seriously in heaven! I sat by that pool reading and sipping fruity non-alcoholic drinks with little umbrellas practically the whole time I was there. I had such fun memories of that little vacation!

Of course it was ruined by the fact that I insisted I didn't need to wear sunblock while I layed out on the beach for about 4 hours. And my bathing suit had a cutout along my lower back. The WORST sunburn of my life. Ouch!

What is it about summer that makes us pull out all the fun drinks? While I wasn't at the time, I'm now completely addicted to coffee (no shame here, people) and most of the time I'm sitting with an iced coffee in my hand instead of a fruity umbrella drink! 



These days, a trip to Walmart by myself is vacation, can I get an AMEN?! Just look at all those Keurig Brew Over Ice options - can't wait to try them all!



I'm usually a Plain Jane iced coffee type, but this Chocolate Fudge Sundae Iced Coffee REALLY kicks it into high gear! Instead of brewing over ice, you actually brew the K-cup over vanilla ice cream - seriously, genius! At the end of your long summer day while your kids are enjoying their popsicles, whip yourself up some of this. I swear, you will feel like your are sitting poolside - yum!


Chocolate Fudge Sundae Iced Coffee

Donut Shop regular iced coffee K-cup
2 scoops vanilla ice cream
hot fudge sauce, slightly warmed
ice
whipped cream


Place two scoops of ice cream in the bottom of a 16 oz plastic cup (I used my favorite faux mason jar cups from Walmart). Drizzle hot fudge sauce over ice cream. Brew K-cup (8 oz setting) over ice cream and chocolate sauce. Stir until ice cream is completely melted. Add ice as desired and top with whipped cream and additional chocolate sauce.

We go through lots of K-cups in this house, did you know that Keurig has a recycling program for used K-cups? Menu Plan 6/22

Happy Monday! You didn't see a menu plan from me last week because we were having our annual Vacation Bible School at our church and we ate dinner there every night. Yes, our church provides dinner for all of the volunteer's families as well as the kids participating and their families. Isn't that such an awesome way to serve the community? Super proud to be a part of them!

This week, I'm hoping to begin a bunch of summer projects! First up is to tackle a bit of a weed area in our backyard - hopefully turning it into a small veggie garden. And then I'd like to paint - I'm getting sick of all these white walls!!
