Mini ciabatta rolls with a red hot chili pepper spread and filled with a savory garlic chicken salad - these are wonderful for lunch or as an appetizer!
Growing up, we pretty much ALWAYS had ham and cheese in the fridge for sandwiches. Actually, I believe my parents always have them in the fridge to this day! Plain white bread, mayo, American cheese, and thin sliced deli ham. Sometimes with Kosher pickles, but most of the time without. As kids, of course we loved them. I think we kind of had to because we had them in our lunch boxes every day - haha!
And you know what, if I'm being honest, I love those simple sandwiches. But I have to say - one of the easiest ways to jazz up a quick dinner is having fun and different spreads on hand in the fridge. Pesto is a classic go-to around here, but I just discovered this Savory Garlic Spread from Mezzetta and I'm pretty much using on everything! Paul's favorite is their Red Hot Chili Pepper Spread - so I decided to get a bit creative and combine the two - oh man are these sliders good!! Creamy garlicy chicken salad with the spicy chili pepper topped with crunchy lettuce, yum!

Chili Pepper & Garlic Chicken Salad Sliders
makes 6 servings
2 cups cooked, shredded chicken
1 celery stalk, diced fine
3/4 cup mayo
1/4 cup Savory Garlic Spread
2 green onions, sliced
1/2 cup Red Hot Chili Pepper Spread
6 ciabatta roll sliders
In a large bowl, combine chicken and celery. In a smaller bowl, mix together the mayo and garlic spread. Mix into the chicken and stir until well combined. Gently stir in the green onions. To assemble sandwiches, spread Red Hot Chili Pepper spread on each half of the rolls. Top with chicken salad, shredded lettuce, and the top of the roll. Keep refrigerated until ready to serve.
I have to say, these little sliders are spicy, but not too spicy! They would be wonderful as a hearty appetizer at a party. The crowd would go nuts for these!
