Cake Mix Chocolate Peanut Butter Bars

Cake mix, oil, eggs, and peanut butter chips combine for these amazingly easy one-bowl, Chocolate Peanut Butter Bars!




We celebrated Silas' birthday this past weekend and it was really so much fun. It was his first "kid" party, actually none of his friends has really had one yet either, so it really was our first experience with a party like this. Man I'm STILL exhausted! They were such a wonderful group of kids and I'm happy to report it seemed like everyone had a great time.

I guess it's all the sugar and activity though, it seriously took them a good two days to recover from it all! This morning, Silas kept saying something about still being 4 to Wesley - I wasn't completely paying attention. I stayed home sick with a pretty nasty head cold, so as long as they were playing nice with each other, I was happy. So finally, this happened:


Silas: Mommy, did you know I'm actually still 4?

Me: No. What do you mean?

Silas: Upstairs in my room. It says I'm still only 4.

Me: Where in your room did it say that?

Silas: (with the hands going) The SIGN Mommy! You know, the sign in my room? It says I'm still 4.

Me: (realized he's talking about his growth chart) No honey, that sign tells you how tall you are not how old you are. You're 5 years old, I promise.

Silas: YAAAY!! I'm really 5 years old, Wesley!! I really wanted to be 5 years old!


:) He's such a cutie pie. Poor kid though, walked around all morning sad thinking he was still 4! 

These yummy Cake Mix Chocolate Peanut Butter Bars were actually made earlier in the week for his party, but they never made it. The boys (and Paul) gobbled these up way before the weekend - I'll bet your family would, too!



Cake Mix Chocolate Peanut Butter Bars
adapted from Gooseberry Patch Almost Homemade

15 oz chocolate fudge cake mix
1/2 cup oil
2 eggs
1 cup peanut butter chips

Whisk oil and eggs in a mixing bowl. Stir in cake mix until well moistened, the batter will be slightly lumpy. Stir in peanut butter chips. Spread into a greased 9 x 13 baking dish and bake at 350 degrees for 20-25 minutes, or until a cake tester comes out clean. Cool, slice, and serve! 



These are perfect with a tall glass of cold milk, yum.

It's rare and I mean REALLY RARE that the four of us all go out to eat together. Ok, maybe not rare for us to eat out, but to an actual sit-down restaurant and not someplace that offers kids' meals in a paper bag? Hardly ever happens in this family! At two and four, the kids are at the age where it's really hit or miss. And by that, I mean trips are usually really fun and enjoyable, or an absolute melt-down disaster. 

Recently, we were invited to come out to our local P.F. Chang's in Collegeville, PA to try out their Winter Seasonal Menu. Just reading the new items had my mouth watering! This was our first trip to P.F. Chang's and I couldn't wait to try some of these dishes. The Shanghai Waldorf Salad, Chili Shrimp Bao, and Miso Glazed Salmon were some of the items that caught my eye.


I usually always pick salmon because it's my FAVORITE so of course I ordered the Miso Glazed Salmon. Oh man, the salmon was perfectly cooked and the sauce was the perfect compliment. It came on a bed of grilled baby bok choy and julienne daikon radish which was super yummy and added a great crunch to the dish.


I have to mention though, I ordered the California Rolls as an appetizer and oh my wow. Seriously, the BEST California Roll I've had to date! This was our first time at P.F. Chang's and between the amazing sushi and the inventive seasonal menu, we'll be back again for sure.


As a side note, I'm very happy to report that this trip was a total win for the boys! They both had some sweet and sour chicken with rice, which was also really yummy. The manager and even the sweet couple sitting next to us were so nice - it was the perfect atmosphere for a family dinner out. If you live local to the Philadelphia area, be sure to visit the P.F. Menu Plan Monday 2/24 - Happy Birthday Silas!

It's hard to believe that we're celebrating my little man's 5th birthday this week! Saturday afternoon we had a really fun Angry Birds themed birthday party for him and it was a blast, but exhausting. His actual birthday is Monday so we'll probably take him out to our favorite local cupcake shop to celebrate. I'm going to stop talking about it now because I'm already tearing up... :)


Besides Silas' birthday, this week should be somewhat of a normal week - odd as it sounds! Here's what I have planned on the menu for the week:

Frosty Orange Juice & Honey Bunches of Oats Giveaway!

Full disclosure here, I have been a HUGE fan of Honey Bunches of Oats since I was a kid! And that is definitely saying something because we were major cereal eaters growing up. Heck, who am I kidding, my family still is! With all four of us going separate directions in the morning, I really don't have time during the week to make homemade breakfasts, as much as I would like to.

So it's really no wonder that I would be head over heels for their new Honey Bunches of Oats Morning Energy cereals. Honestly, what mom DOESN'T need more energy in the morning? If you find one, let me know, I'll take notes! They come in two varieties: Cinnamon Crunch and Chocolatey Almond Crunch and I'm surprised to say that the chocolate was definitely my favorite. I'm not really into chocolate cereals at all, but this one really combines well with the almond. These new Morning Energy cereals contain 2/3 of your day's whole grain, 10g of protein (along with a half cup fat free milk), and 5g of fiber per serving. I definitely noticed that it kept me fuller longer than regular cereals, which is wonderful when you're on the go like me.




Of course both cereals went absolutely amazing with a tall glass of Frosty Orange Juice. Oh man, you simply NEED to try these! You can cut the sugar, or add honey instead if you'd like - but I'll keep the recipe as-is and serve these for special breakfasts around here. I know a certain someone with a 5th birthday coming up soon who would LOVE one of these in the morning with his cereal. Think of an orange creamsicle in a glass...


Frosty Orange Juice
makes two servings

2 cups orange juice
1/4 cup sugar
1 cup milk
1 teaspoon vanilla
8-10 ice cubes

Place all ingredients in a blender and blend until smooth. Pour into glasses and serve immediately.

Creamy Ham & Noodle Casserole

Egg noodles and ham tossed in a light, cheesy sauce - the perfect easy weeknight meal!



I walked into Target the other day, and I swear the cute sandals were laughing at me. All sorts of floral t-shirts, bright colored bathing suits, and summery skirts mocking me as I walked by in my tired beige toggle coat, black plaid scarf, and pilly grey gloves. Right outside in the parking lot are 4-5ft high snow piles and salted walkways leading to the door.

People, there should be a rule.

We are still a good 2-2 1/2 months away from even thinking about wearing those clothes around here. I mean seriously Target, can't you hire some designers to make long sleeve/long pants in springy colors and patterns FIRST before you decide it's time to pretend winter doesn't exist anymore?

In fact, I propose a new "shopping season" in stores like what I described. Oh I would be there in a heartbeat! Come on, at least put the bathing suits away for goodness' sake.

If you're depressed that winter is never-ending like I am, your probably getting sick of making the same boring soups and casseroles to warm your family up. This one is truly a keeper. Ham always makes me think of Easter, so this casserole is the best of both worlds. Easy ingredients, too that you'll most likely already have on hand.


Creamy Ham & Noodle Casserole

2 cups cooked ham, chopped 
2 eggs, beaten
1 cup sour cream
1 1/2 tablespoons dried, minced onion
1 teaspoon kosher salt
1 cup shredded Swiss cheese
12 oz egg noodles, cooked and drained

In a large mixing bowl, whisk eggs and sour cream until smooth. Add ham, minced onion, salt, and cheese. Gently fold in egg noodles, turning to coat well. Transfer to a 2 quart casserole dish and bake at 350 for 30 minutes, watch the casserole during the last 10 - you might need to put foil over to prevent the edges from getting too brown.
