All of a sudden it seems like the weather has decided it's had enough of fall. I stepped outside and it was snowing/sleeting and FREEZING cold! My plan was to just run out for some soda for us and juice for the kids and while I was in the store I decided to pick up some fuzzy gloves and a new scarf while I was at it.

Because apparently autumn is over. 

I'm not really excited about this, can you tel?! Bitter cold weather like this makes me want to curl up on the couch with a blanket and order dinner out. I don't know why, it just makes me feel like being lazy - I can't be the only one!

I think in order to get through the next season (which is here already) I need to keep my pantry stocked with easy and simple shortcuts to give me that much more of an incentive to get off my rear and cook. These amazing Imagine Organic®  Simmer Sauces are absolutely perfect for that endeavor.

Portobello Mushroom & Chicken Skillet

2 tablespoons olive oil
2 boneless, skinless chicken breasts, cut up into small chunks
2 portobello mushrooms sliced thick
Imagine®  Organic Portobello Red Wine Simmer Sauce
Brown Rice

Heat olive oil in a deep skillet over medium heat. Add chicken and cook 6 - 10 minutes, turning pieces twice, until cooked through. Add mushrooms and simmer sauce. Reduce heat to a simmer and cook for 10 minutes stirring occasionally. Serve over hot brown rice.
