Lasagna noodles layered with mashed potatoes, cheese, and onions! We are a pierogi-loving family in this house! Most times I buy the frozen pierogies when they’re on sale at the grocery store. That was until I discovered this delicious Pierogi Casserole recipe! I’m not sure we’ll ever be able to go back to the frozen kind again! What kind of mashed potatoes are used? Of course leftover, homemade mashed potatoes are the best for this recipe. You can also use prepared mashed potatoes in the refrigerated section of the grocery store, or even prepared instant mashed potatoes would work if you’re short on time! I recommend using my Creamy Mashed Potatoes in this recipe! How do you keep the lasagna noodles from sticking together? It’s so annoying, isn’t it? Drizzle the drained noodles with a small bit of olive oil and stir them around, this will prevent them from sticking together while you’re layering your ingredients. Pierogi Casserole step by step directions: Place lasagna noodles in a single layer in the bottom of a casserole dish that has been sprayed with nonstick spray. Spread a layer of mashed potatoes over the noodles. Sprinkle minced onion over the mashed potatoes. Lay sliced American cheese and butter on top. Repeat these layers twice more, for a total of 3 layers. Cover with aluminum foil and bake. Cool slightly before serving! Can you freeze pierogi casserole? Yes! Freeze this casserole before baking. Allow it to thaw overnight in the refrigerator before baking as directed. It may need an additional 10 minutes or so to compensate for the chill of the refrigerator. How long will leftovers last?
