In the summer, I honestly don’t remember a time when my grandmother didn’t have a pitcher of iced tea in her fridge. She still uses that frosted clear Tupperware pitcher, with the button on the lid, do you remember that one? It’s amazing how certain objects bring back you childhood! Grandmom’s iced tea is not that super sugary stuff that you scoop from the can. Nope, her iced tea is the real deal – I remember her having that pitcher on the counter with the tea bag tags hanging over the side as it steeps. Dark iced tea with just enough sugar to take the bitterness away. We were just there a few weeks ago for a last minute visit with the boys. One of them must have asked me for a drink and of course as soon as I opened that fridge, there was that familiar pitcher. Loving the old memories and the new memories our family is making. 🙂 This Chicken Parmesan Panini is the perfect sandwich to go with that iced cold glass of iced tea. The pesto mayo spread gives the sandwich an amazing garlic punch and of course the sandwich gets grilled and toasted for an amazing texture. No need to heat up the big outside grill, use your panini press or your indoor tabletop grill – easy kitchen clean up, too!
