Baked Italian Dijon Pork Chops

Mondays are usually my designated food shopping days. I do tend to catch up with things we may run out of during the week, but I do the bulk of my shopping on Mondays. I think the only reason is because Sunday nights are when I actually sit down to menu plan and write out my list. I'm usually excited to cook up some past favorites for the family and try some new recipes to possibly share with you all!

My two top grocery stores are a local grocery outlet that I typically hit first, just to see what they have that week. And then I always go to Walmart to pick up the rest of what we need for the week.

Is it weird that I actually like this routine? I guess I could clarify, I actually enjoy food shopping! I was actually in Walmart picking up ingredients for these pork chops, as well as the rest of my grocery list, and I wound up getting in line behind another mom I know from our church. After joking a bit with her that I was getting a couple hours to myself away from the house that morning, she responded: "Oh yay, food shopping! Just what every mom wants to do in her spare time!" I laughed with her and nodded.

But you know what? I really DON'T mind and I look forward to it each week! I like knowing I have a house filled with complete meals ready for me to make for the family. Not just boring dinners, but ones I actually like to eat, too! Oh and one other reason...

That's Wesley's plate. After his SECOND helping of his pork chop dinner! And yes, he did eat all of his broccoli and green pepper the first time around. My kids love it when I cook for them, and I just simply love that feeling. And to be quite honest, there is absolutely nothing wrong with that. :)

Baked Italian Dijon Pork Chops

3 large (or 6 small) boneless pork chops
2 medium green peppers, sliced in thin rings
1/2 cup Kraft Zesty Italian Dressing
2/3 cup Dijon mustard
kosher salt
fresh ground black pepper

Pat pork chops dry and place in the bottom of a baking dish. Season with salt and pepper. Lay green pepper rings over chops. In a separate bowl, whisk together dressing and mustard until smooth. Reserve 1/3 cup of sauce, and pour the remaining sauce over the chops and green peppers. Bake at 425 for 15 minutes or until cooked through. Allow pork chops to rest 5 minutes before serving. Warm reserved sauce and serve with pork chops, if desired.

These pork chops were seriously one of the easiest dinners I've made, and the flavor is just amazing! Add sliced onion with the peppers if you want, I thought the peppers were out of this world! I don't know about you, but I always have Italian dressing and Dijon mustard on hand anyway, so this one is always ready to go at my house!
