Quesadilla Burgers

May 2, 2014
This is a Sponsored post written by me on behalf of Private Selection for SocialSpark. All opinions are 100% mine.

Juicy grilled burgers served on a melty, cheddar cheese quesadilla, and topped with lettuce and pico de gallo!

Burgers are definitely one of my favorite, quick, weeknight meals year-round. In the spring and summer of course we use our gas grill out back. During the winter, we use the counter top grill - works just as good! I usually top the burgers will typical condiments: lettuce tomato, cheese, ketchup, mustard & relish (my favorite). Paul almost always adds sriracha to his! Honestly? He does the cooking on burger night so I'm off, haha!

By far though, this quesadilla burger is our favorite. It's actually my take on the one served at a popular chain restaurant (which shall remain nameless :) - it was always "my burger" when we went out to eat in our dating days. I love that I can use the low carb tortillas for me and the regular ones for the boys, and Paul can still have his spicier than ours.

Quesadilla Burgers

6 frozen burgers
12 taco-sized tortillas
2 cups shredded cheddar cheese
2 cups prepared pico de gallo
2 cups spring mix
sour cream (if desired)

Grill burgers according to your family's preferences and set aside to rest. Meanwhile, heat a griddle on medium heat and spray with non stick spray. Use a small bowl to trim tortillas to better fit burger patties - this step is not necessary, but makes them look nicer. Lay and even amount of tortillas on griddle and sprinkle generously with cheese. Once cheese is melted, place a burger patty on half of the tortillas. Spread pico de gallo over the burgers and lay spring mix on top. Top each burger with a second quesadilla. Repeat process for remaining tortillas & burgers. Serve with sour cream for dipping.

I can't even begin to tell you how good these burgers are! Your family will go nuts, I'm sure of it. Be sure to Like Private Selection® on Facebook and Follow Private Selection® on Pinterest for more cooking ideas!

  1. do you think you could grill these on the grill instead of in a griddle?

Probably could, although I've never done that before. I would think it would take a lot less time to melt the cheese, so keep a close eye on the tortillas!
