Chili Pepper & Garlic Chicken Salad Sliders

Mini ciabatta rolls with a red hot chili pepper spread and filled with a savory garlic chicken salad - these are wonderful for lunch or as an appetizer!



Growing up, we pretty much ALWAYS had ham and cheese in the fridge for sandwiches. Actually, I believe my parents always have them in the fridge to this day! Plain white bread, mayo, American cheese, and thin sliced deli ham. Sometimes with Kosher pickles, but most of the time without. As kids, of course we loved them. I think we kind of had to because we had them in our lunch boxes every day - haha!






And you know what, if I'm being honest, I love those simple sandwiches. But I have to say - one of the easiest ways to jazz up a quick dinner is having fun and different spreads on hand in the fridge. Pesto is a classic go-to around here, but I just discovered this Savory Garlic Spread from Mezzetta and I'm pretty much using on everything! Paul's favorite is their Red Hot Chili Pepper Spread - so I decided to get a bit creative and combine the two - oh man are these sliders good!! Creamy garlicy chicken salad with the spicy chili pepper topped with crunchy lettuce, yum!



I really think that sandwiches are one of the easiest ways to get creative in the kitchen. If you have a favorite sandwich idea, you could win $25,000 from Mezzetta! Chili Pepper & Garlic Chicken Salad Sliders
makes 6 servings

2 cups cooked, shredded chicken
1 celery stalk, diced fine
3/4 cup mayo
1/4 cup Savory Garlic Spread
2 green onions, sliced
1/2 cup Red Hot Chili Pepper Spread
shredded lettuce
6 ciabatta roll sliders

In a large bowl, combine chicken and celery. In a smaller bowl, mix together the mayo and garlic spread. Mix into the chicken and stir until well combined. Gently stir in the green onions. To assemble sandwiches, spread Red Hot Chili Pepper spread on each half of the rolls. Top with chicken salad, shredded lettuce, and the top of the roll. Keep refrigerated until ready to serve.





I have to say, these little sliders are spicy, but not too spicy! They would be wonderful as a hearty appetizer at a party. The crowd would go nuts for these!

Skinny Cinnamon Roll Baked Oatmeal

This baked oatmeal is egg free, sugar free, and absolutely delicious! 



Ok, so by looking at the recipes on Mostly Homemade Mom (mainly the dessert recipes) you'd never know that I've been trying to eat healthy the past few weeks. Well I am, and it has paid off - I'm down about 5 pounds and I think that is quite a feat given the yummy treats I create for this blog!

Really though, not just for me, but I feel like lately the boys have been eating A LOT (ok, mainly all) junk food. I just haven't had time to reinforce healthy eating with them while I've been working - and certainly not these past two weeks while Paul has been away. Grandmom's kitchen has treats 24/7, haha! I swear, they would eat their weight in cheese curls given the chance any day of the week.

The problem is when healthy food tastes like DIET food. Most of the time, I can deal with it because I know my goal is to feel healthier and lose some weight. But they do not have a goal! They want to eat something that tastes good all the time, and they should - they're kids! Breakfast is one of the hardest meals for some reason for me to get them to eat healthy. Unfortunately sugary cereal and Pop-tarts happen all too often around here.

This oatmeal is absolutely wonderful! The kids gobbled it up, had no clue there was no sugar, and seriously LOVED the "cream cheese" frosting! You really have to try it!

Skinny Cinnamon Roll Baked Oatmeal

Ingredients
  • 2 cups rolled oats
  • 1 cup unsweetened applesauce
  • 1 cup almond milk
  • 1/2 cup Truvia
  • 1 teaspoon vanilla
  • 2 teaspoons cinnamon
Topping Ingredients
  • 1 cup cottage cheese
  • 1 tablespoon almond milk
  • 1 tablespoon Truvia
  • 1/2 teaspoon vanilla
Cooking Directions
  1. In a medium mixing bowl, combine oats, applesauce, almond milk, Truvia, vanilla, and cinnamon. Stir until well moistened.
  2. Pour into four greased ramekins, or a greased 9x9 baking dish. Bake at 375 degrees for 40 minutes, or until oatmeal is firm. Remove from oven to cool.
  3. Meanwhile, in a blender combine cottage cheese, almond milk, Truvia, and vanilla. Pulse until smooth and creamy. Cover and refrigerate until ready to serve.
  4. Spread frosting over cooled oatmeal with an extra sprinkling of cinnamon if desired.






This oatmeal freezes well, too - but not the frosting. After making it though, you might just want a tub of it in your fridge at all times - it's seriously that good! If you are a Trim Healthy Mama (*affiliate link) , this recipe is an E (energizing) meal.

If you've been following my menu plan posts, my husband has been in Israel since Mother's Day and won't be back until this Monday and I am COUNTING THE DAYS! Blueberry Cobbler Sugar Cookie Squares

Sweet blueberry cheesecake filling sandwiched between sugar cookie cobbler - so simple and irresistible!




I'm in denial over what is happening tomorrow. My baby boy will be graduating preschool. Meaning, after tomorrow, he'll be a Kindergarten student. It's just strange to me that I've always had "little kids" at home. At least that's what I've always told my students!

He'll actually be old enough to BE one of my students. Let that sink in for a minute, Kel.

Ok, maybe don't. Stop thinking about him growing up... Yikes! 

I came in the living room earlier today and saw him sitting on the couch, with his legs bent up, while he was playing his LeapPad. I remember when he was about six months old thinking that I couldn't wait until he was playing with toys on his own! It happens in a blink, for real. So basically, what I'm trying to say is, I'm going to be a mess tomorrow.

I think I may make a whole pan of these Blueberry Cobbler Sugar Cookie Squares to cheer myself up. These start with a sugar cookie mix pouch to make it super easy to whip up for a quick dessert or a last minute bake sale. 


Blueberry Cobbler Sugar Cookie Squares

1 pouch (1 lb 1.5 oz) sugar cookie mix
1/2 cup butter, melted
2 eggs, divided
8 oz cream cheese, softened
1/4 cup sugar
1 1/2 cups blueberry pie filling

In a medium bowl, mix together sugar cookie mix, melted butter, and one egg. Press half of the dough into a greased 9x9 baking dish. In a separate bowl, beat together remaining egg, cream cheese, and sugar. Stir in 1 cup blueberry pie filling. Spread on top of cookie dough in pan. Crumble remaining cookie dough and drop on top of blueberry cream cheese layer. Spoon remaining 1/2 cup blueberry pie filling on top. Bake at 375 for 20 - 30 minutes or until edges are brown. Cool before serving, store in refrigerator.





Yeah. Definitely will need a whole pan to get through tomorrow!

Menu Plan Monday 5/19



Ok, so it's exactly one week before Paul gets back from Israel. I'm officially EXHAUSTED! Honestly though, my family - especially my brother Mark - has been a huge help. I think it just takes some of the pressure off when I'm staying with them while Daddy is away, I'm so glad I decided to do that! 

I have to say too, Skype is pretty much awesome. I've been able to see and talk with him most days, the only real issue we've had is the 7 hour time difference. He's getting ready for bed right as we're getting home from school/work. I can't wait until he's home so we can get back to normal!

This week is SO exciting because Silas graduates from preschool Tuesday night! We're planning on taking him out for ice cream afterwards. I can't wait!

BBQ Bacon Ranch Dip - #KCMasterpiece

This addictive dip layers ranch cream cheese, BBQ sauce, bacon, green onion, tomato and cheddar - SO good with tortilla chips!




You all know I'm BIG into dips and this one does not disappoint! I feel like when we have parties around my family, the dips and snacks are just as important as the food! During the summer when we have get togethers - for Memorial Day, the 4th of July, Wesley's birthday at the end of July, or just for any old reason - we usually make my dad grill burgers and barbeque chicken (HA) and the rest is up to us. Potato salad, balsamic strawberry salad (my sister's recipe), and TONS of dips and snacks. My mouth is watering just thinking of it all!





Its just not the same without the right BBQ sauce! This new KC Masterpiece® Kansas City Classic completely lives up to the name - classic! What I love is that they're always coming up with new recipes to try (KC Masterpiece Recipes by Ardie Davis.docx), so be sure to follow KC Masterpiece®​ on Twitter and Facebook. This BBQ Bacon Ranch Dip is such a great way to use this delicious sauce - spread over ranch cream cheese and topped with layers of bacon (YES), tomato, green onion, and cheddar. Let this dip come to room temperature before serving for optimal dippage! :)


BBQ Bacon Ranch Dip

8 slices bacon, cooked and crumbled
2 (8 oz) packages cream cheese, softened to room temperature
1 oz package dry ranch dressing mix
1/2 cup quality BBQ sauce (I used KC Masterpiece® Kansas City Classic)
1/2 cup chopped green onions
1 medium tomato, seeded and diced
1 cup shredded cheddar cheese


In a medium bowl, mix together the cream cheese and dry ranch mix until well combined. Spread into a pie dish. Pour BBQ sauce evenly over cream cheese. Layer with most of the crumbled bacon (keep some for garnish), most of the green onion (keep some for garnish as well, diced tomato, then cheese. Top with remaining bacon and green onion. Cover and refrigerate overnight. Allow dip to come to room temperature before serving.
