Skinny Strawberry Cheesecake Granola Parfait with Kashi!

You'd never know sweetened cottage cheese blended with frozen strawberries and layered with crushed granola bars would taste SO good and be so healthy!

Somewhere between Thanksgiving and Christmas I became an ice-cream-at-night addict. The kids are in bed, I'm sitting there catching up on blog work usually with a few episodes of What Not To Wear on Netflix (LOVE that show), and a bowl of fudge ripple just goes well. Or mint chocolate chip. Or even cookie dough. Yup, you get the idea. It's a bad habit to break, but I REALLY need to!

This sweet, crunchy dessert combination is and easy swap. You will, no doubt in my mind, think you are eating strawberry cheesecake ice cream. Get past the cottage cheese, I didn't think I liked it either. When you blend it, all those chunks smooth out and you get a creamy, frozen consistency just like... well... ice cream!

The crushed Kashi granola bars are a MUST for this skinny dessert! I recently tried their new Kashi Crunchy Granola and Seed bars in Honey Oat Flax and Chocolate Chip Chia and they were such a great snack. Surprisingly the Honey Oat Flax was my favorite, delivering 3g of fiber and 25g of whole grains. I think a lot of us are trying to get out of the "ice cream habit" and switching your late night snack to these delicious crunchy bars is one I'm MORE than willing to make! The crunchy honey flavor went really well with the strawberry cheesecake, too! 

Skinny Strawberry Cheesecake Granola Parfait
recipe makes one serving

1/2 cup low-fat cottage cheese
5-6 frozen strawberries
1/4 cup reduced fat milk
2 teaspoons Truvia (or your favorite sweetener)
1 Kashi Honey Oat Flax Crunchy Granola Bar
whipped cream & sprinkles (optional)

Place cottage cheese, strawberries, milk, and sweetener in a small food processor or blender. Pulse until well blended, about one minute, scraping down the sides of the bowl at least once. Unwrap granola bar and place in a shallow bowl. Using a glass, carefully crush into chunky crumbs. Sprinkle 1/3 of the granola into a single serve parfait dish. Spoon 1/2 of the strawberry cheesecake mixture on top. Repeat the layers, ending with the last of the granola. Serve with whipped cream and sprinkles.

Oh my goodness, the sweet, crunchy granola goes SO GOOD with the frosty strawberry cheesecake layers - you have to try it!
