I know this will come as a shock to most of you, but I'm a mom. Ha. If you read the title of my blog, you oughta know that! But because I'm a mom, it implies various things about me:

  • I usually have a diaper in my purse
  • Nobody's bed is EVER made in my house
  • Socks are everywhere, and no where at the same time (how is that possible?!)
  • I've learned to like cold coffee

I used to love walking around the mall and just... browsing. It's been so long that I'm afraid I'd bore myself to tears from just "browsing" now! I don't know about you, but for me the mall is not fun anymore. The kids always want to play in the little playground, I'm searching for whatever it is I need to get in and get OUT, and then they always want food. UGH. Exhausting just thinking about it!

Shortcut Hot Roast Beef Sandwiches

Deli sliced roast beef simmers in a thin gravy and served with cheese, ketchup and Kosher pickles. Napkin required!



Ok, let's talk a minute about the Super Bowl. Honestly? I couldn't tell you who is even playing... I know that's sad! I've just never been into football. Really, I've never been into sports at all. Yes I do realize God has blessed me with two little boys. His humor sometimes... :)

Growing up in Philadelphia, we had a lot of opportunities to go see the Phillies, Flyers, 76ers, and the Eagles. Going to see sports being played live right in front of you is MUCH better than watching it on TV. I really never, ever wanted to see the Phillies because it was always summer and it was always sweltering and we always had seats in the blazing sun. Plus, why in God's name are baseball games so long?! Hockey and basketball were kind of the same for me, back and forth and all. I think I liked seeing the Flyers better because there were fights from time to time and Flyers fans are NUTS! Even though I stated above that I've never really been into football, it's probably the only sport I would want to go see a game again. I think I went to see the Eagles play when I was in middle school. It was nice weather and I actually was able to follow what was happening... why oh why is it so much more boring watching it on TV?

Basically the Super Bowl for me means trying new snack foods and the Puppy Bowl. I mean really, they're so darn cute!

My mom and Grandmother have been making these Shortcut Hot Roast Beef Sandwiches for as long as I can remember. It's one of those dinners that reminds me of my childhood instantly, you know the ones. The flavors that bring you back. These sandwiches are super simple to make and they're perfect for Super Bowl Sunday. Don't forget the chips on the side!


Shortcut Hot Roast Beef Sandwiches
makes about 8-10 sandwiches

2 lb deli roast beef, freshly sliced
12 oz jar savory beef gravy
water
8 crusty club rolls
1 kosher dill pickle (the kind from the barrel at the deli)
1/2 lb American cheese, sliced thin
ketchup (optional)


In a large sauce pan, stir together roast beef, gravy, and half of a jar's worth of water. Heat to boiling stirring occasionally, then cover and reduce heat to simmer for about 20 minutes or until beef is hot. If preparing for a party, the beef can be then transferred to a Crockpot and kept on low. Split rolls and place cheese and then beef on top. Serve with slices of kosher pickle, ketchup, and additional gravy if desired.




Oh man, these babies are messy and good. LOTS of napkins required!

Menu Plan Monday 1/27

So I have a bit of a confession to make... we've been eating out WAY too much lately. I'm going to blame the snow for part of the reason, it seems like every week my day to go food shopping is when we seem to get the worst weather! So I'll scrape something together with what we have and then I'm really tempted to order out until I can go food shopping again. It seems like if they even report a 1/2 inch of snow, everyone decides to run to the supermarket... I guess I might need to join them, haha!
