Chocolate Mousse Brownies

A rich chocolate brownie topped with a decadent chocolate mousse layer and drizzled with more melted semi sweet chocolate - chocoholics unite!



So, before I started food blogging when I came across a recipe that used squares of baker's chocolate, I turned the page. Actually, I never really baked with cocoa powder either. I remember once I made chocolate cookies with white chips for Christmas and I hated them and was forever resentful of the quarter-used tub of baking cocoa left in the pantry.

Baker's chocolate isn't cheap and I don't know about you, but I'm not really willing to try something new and have it be a waste of money. Maybe there's a generic brand out there, but I've never found it so I just skipped over those recipes. Then, to my surprise, my favorite grocery outlet had boxes and boxes of all varieties of Baker's chocolate for $.99! I mean, that's a heck of a deal.

I had been meaning to try these for quite some time, because they looked just too darn good not to!! And I'm happy to report, worth the money entirely. The bottom layer is a rich, fudgey brownie, and the mousse layer is light but still chocolately. Don't skip the drizzled chocolate, not only does it add a third chocolate flavor, the crunch gives it a great texture, too. Yum!!


Chocolate Mousse Brownies
from Kraft Recipes

8 squares Baker's semi sweet chocolate, divided
1/2 cup sugar
1/4 cup flour
14 oz can sweetened condensed milk, divided
4 eggs
3.9 oz package instant chocolate pudding mix (dry)
1 1/2 cups Cool Whip, thawed

Melt 6 chocolate squares as directed on package. Beat in sugar, flour 1/4 cup sweetened condensed milk, and 4 eggs. Pour into a greased 9x9 baking dish and bake at 325 for 25 minutes. Cool completely. In a separate bowl, whisk together remaining sweetened condensed milk and dry instant pudding until smooth and there are no more lumps. Gently stir in Cool whip. Spread over cooled brownies in pan. Melt remaining 2 squares chocolate and drizzle over brownies. Refrigerate until ready to serve.


Goes AWESOME with a glass of ice cold milk. A chocolate lover's dream!!

Easy Cheesy Pizza Pockets

Grands rolls, pizza sauce, cheese, and your favorite pizza toppings make a quick and easy dinner - that your family will inhale!!




I have ALWAYS been a huge mushroom topping fan on my pizza, how about you? I think you either love mushrooms on your pizza or absolutely detest them. Lucky for me, my husband shares my mushroom obsession. Not so lucky for my 4 year old, however. I kinda snuck the mushrooms in these pizza pockets and you know what? He didn't even realize they were in there haha! I actually think next time I might sneak some spinach in the filling, too if there's room.

The secret to these pizza pockets is the understanding that, some of them probably will explode. I don't mean explode and make a mess all over the inside of your oven, I just mean that if there's a bit of pizza sauce where you've tried to seal it with the fork, some of the cheese will escape as it's baking. Just try not to overfill them and serve with some extra pizza sauce on the side. 

Honestly? It's no biggie. Even the semi-exploded ones tasted LEAPS and BOUNDS better than regular Hot Pockets from the grocery store. Seriously, these put Hot Pockets to shame. And that's saying something coming from one who practically lived off of those things when I was first married. :D Enjoy and share away!

Easy Steak Sauce Caramelized Onions - Summer Entertaining with World Market

I HATE when you make plans to spend the day outside with the family and kiddos, enoy a great meal, and catch up with each other. And then all of a sudden, despite no mention of it in the weather report, it starts RAINING! Ugh, so annoying! Luckily the kids had some splash time in the pool and sprinkler before we had to head inside. I feel like we have the worst luck with the weather, good thing neither of us planning our weddings outside!

Would you believe me if I told you that pitcher is acrylic? I love that I don't have to worry about it dropping and breaking with the kids running around. The handles on the wicker tray made everything very easily portable when the weather went bad.


And I LOVE the color of the wicker on this flatware caddy! Stuff some colored napkins to fit your theme and take it wherever you need. There's enough room for forks, knives, spoons, and even some napkins in the back! This will definitely come in handy for parties.



Ok, how awesome do those white enamel flatware look with the woven chargers? Those chargers are sturdy and great for beach themes as well.


Alright now, on to these delicious onions. I know, I know, some people are just not fans of onions and I'm married to one of them... hence one of the reasons I was cooking over at my sister's place! I, on the other hand, LOVE grilled/caramelized onions and these are a notch above the rest. We usually use our favorite brand of frozen burgers from the store to grill and adding these onions really took store-bought burgers to the next level. You have to try them!


Easy Steak Sauce Caramelized Onions 
2 large onions, thinly sliced and separated into rings
3 tablespoons olive oil
1/4 cup steak sauce, plus more as needed to taste

Heat olive oil over medium high heat in a large skillet. Add onions and saute for about 20 minutes until onions are soft and are turning brown on edges. Remove from heat and stir in steak sauce, turning to coat evenly. Top burgers with a heaping amount of onions, with additional steak sauce as desired. Yum!

Well, this week is going to be a bit busy, but I've learned in recently that I can't take a week off of meal planning/shopping just because it's busy! Last week was EXTREMELY busy and unfortunately ended on a bad note - my poor planning/shopping resulted in us eating out more than I care to admit. 

... and then there's nights like this where the last thing I want to do is sit here an write out a menu plan. There is ice cream to eat and an episode of Grey's Anatomy to watch (I'm currently on Season 2, what the heck have I been doing not watching this show until now)!!! 

But I need to, I absolutely DO NOT want to have a repeat of last week. So here's the plan I have:

Chicken & Cornbread Stuffed Peppers



A few months ago, I posted a Southwest Cornbread Skillet in honor of Martha White's annual Martha White/Lodge Cast Iron Cornbread Cook-off. Well they've chosen the winners and I have to say they all sound absolutely delicious! They even sent the recipes for me to try -  drumroll, please...

Don't they all sound AWESOME?? I couldn't wait to taste the third place winner, Poppin' Chicken Pones. I LOVE stuffed peppers and this seemed like such a fun twist on the traditional recipe with beef, veggies, and rice. 

Now this one I used regular bell peppers, just to dial down the heat a bit for my young kiddos. I'll bet the poblanos would be wonderful in this!


Chicken & Cornbread Stuffed Peppers (Poppin' Chicken Pones)
Kim B. of Heneger, Alabama

4 poblano chile peppers (I used green bell peppers)
2 cups cooked, shredded chicken
1 (1.25 oz) package taco seasoning
1 (4 oz) can chopped green chiles
1 (14 oz) can tomatoes with green chiles, drained
1/2 cup creamed corn
1 cup shredded Colby and Monterey Jack cheese blend
1 (6.5 oz) package Martha White Yellow Cornbread & Muffin Mix
1 large egg
1/2 cup milk

Spicy Ranch Sauce
1/2 cup ranch dressing
1 teaspoon hot sauce
1 teaspoon lime juice

Slice peppers in half length wise and remove stem and seeds. Arrange cut side up on a 12 x 15 inch Lodge cast iron platter or a 12 inch Lodge cast iron skillet. In a large bowl, combine chicken, taco seasoning, green chiles, diced tomatoes, creamed corn, shredded cheese, egg, milk, and cornbread mix. Stir to combine well. Spoon equal amounts of filling into each pepper. Bake 30 to 35 minutes or until lightly browned. In a small bowl, combine ranch dressing, hot sauce, and lime juice. Drizzle over stuffed peppers before serving.



That ranch sauce is out of this world, I'm telling you! Yum!

Patriotic Ice Cream Soda



I'm not really sure why, but we never really grew up having ice cream sodas as a treat. We're big ice cream eaters in our family and I think making ice cream sodas was just too much work, haha! I do remember having a root beer float once at our favorite diner Nifty Fifty's in Philadelphia, and it really didn't wow me, probably because I'm not a huge root beer fan either. 

Um, hello, Kelly. You can make ice cream sodas with any kind of soda. I mean, you are a food blogger, right? 

Ok, I'm fine now. Sorry for the interruption. :)

I thought this was a cute idea, but I really wasn't expecting to like it as much as I did. Mountain Dew makes a Blue Voltage soda, which is actually a raspberry flavor. When that meets up with layers of vanilla ice cream and strawberry syrup - I have to say, the flavor is amazing!! Plus it makes this really cool red, white, and blue tie-dye effect in the glass. Your kids will go crazy for this ice cream soda, my husband and I did, too!


Patriotic Ice Cream Soda

vanilla ice cream
strawberry syrup
Mountain Dew Blue Voltage Soda
whipped cream


Scoop a layer of ice cream in the bottom of your glass and drizzle some strawberry syrup on top. Repeat layers until the glass is filled. Slowly pour soda into glass. Top with whipped cream and an extra drizzle of strawberry syrup.

Easy Onion & Dill Biscuits



If you read my Menu Plan Monday post yesterday, you know that this is a very special week for me here on Mostly Homemade Mom. Two years ago I began posting recipes on this blog just as a way to document my favorite meals. I really loved the idea of being able to share my favorite recipes with my family and friends, and even maybe some new friends online.

And that's where you came in! I'm not sure whether it was my beauteous photos back then (haha) or just the easy meal ideas I loved sharing, but I actually had people that wanted to try my foodie ideas, too! I was hooked on this blogging thing.

I really am not sure how to express just how grateful I am to God that I have this opportunity to blog, and to actually provide for my family a bit financially by something I absolutely love doing. Even more than that I've had the opportunity to "meet" all of you and some great fellow bloggers. Have I given you some warm fuzzies all over? I hope so. :)

Ok, on to these amazing little biscuits. These are a classic Mostly Homemade Mom recipe - three ingredients, pop them in the oven, and it'll be the first thing gone from the table. I'm telling you! Plus I don't know about you, but I always have dried dill and minced onion on hand anyway. This is such an easy side dish for pasta or a salad.


Easy Onion & Dill Biscuits

1/4 cup butter, melted and cooled slightly
1 tablespoon dried, minced onion
1 teaspoon dried dill weed
1 can Pillsbury Grands biscuits

In a large bowl, combine butter, onion, and dill. Cut the biscuits in half and place in the bowl with the dill mixture. Using your hands, gently toss the biscuits to make sure they're evenly coated. Place biscuits on a foil-lined cookie sheet (it'll be snug) and bake at 350 degrees for 11-15 minutes.
