    White Chocolate Strawberry Shortcake



    I am READY for spring. How about you? The only good thing about winter in my opinion is snow, and the storms that we've had this year were really duds. I was looking forward to taking Wesley sledding for the first time and it just hasn't happened!

    This White Chocolate Strawberry Shortcake is spring in a 9x9 baking dish. It's messy and I'm telling you, you won't care one bit. This one actually calls for dry milk and don't skip it - the dry milk really gives it a richer flavor. Ditch the plate, just grab a big serving spoon and dig right in! 


    White Chocolate Strawberry Shortcake

    6 shortcake dessert shells (the circle ones they sell next to the strawberries at most grocery stores)
    6 oz container vanilla yogurt
    1/3 cup dry milk powder
    8 oz package cream cheese, softened
    1/4 cup sugar
    3/4 cup Cool Whip
    3.3 oz package instant white chocolate pudding mix
    1 1/2 cups cold water
    1 pint fresh strawberries, hulled and sliced


    Slice dessert shells in quarters and arrange on the bottom of a 9x9 baking dish. Place half of sliced strawberries over dessert shells. In a medium bowl, combine yogurt, dry milk, and cool whip; set aside. In a large bowl, whisk pudding mix and water until well combined. The pudding should begin to thicken, but still be runny. Add softened cream cheese and sugar, stirring to combine well. Gently mix in yogurt mixture. Spread half of white chocolate filling over strawberries in dish. Layer with remaining strawberries and white chocolate filling. Refrigerate at least an hour before serving. Which will be really hard to do!

    Menu Plan Monday 2/25 - Happy March!



    Well, we had a whirlwind of a weekend celebrating Silas' 4th birthday. Friday night, we took him bowling for the first time, just Paul and I, no little brothers allowed! Then we spent Saturday at Grandmom & Pop pop's house visiting them and Grammy (my Grandmother) who was visiting from Philadelphia. Today we had church and afterwards the family treated him to his first trip to Chuck E Cheese. Let's just say he didn't argue with me over bedtime at all this weekend!

    Before I get to my menu for this week, there are actually two giveaways going on right now!     Southwest Cornbread Skillet



    If you follow me on Facebook, you may be aware a bit ago I was in the market for a cast iron skillet. I've always had the same set of Cooks Essentials cookware from QVC that I received at my bridal shower. I really can't complain, they helped me make some delicious meals over the years! But they are showing their wear, especially in my everyday 12 inch skillet. 

    I settled on this Lodge 12-Inch Pre-Seasoned Skillet and let me tell you, it was like Christmas when this thing arrived! I was a little apprehensive over how to take care of it, but it's seriously not scary at all. I just wait for the skillet to cool down a bit, wipe it down a few times with a wet rag, and then rub some vegetable oil into the skillet. Done! 



    I've cooked quite a bit with this skillet in the past two weeks, but I was REALLY excited to use it with some cornbread mixes Martha White gave me to try out. Your family will LOVE this Southwest Cornbread Skillet!! Just a little bit of heat, with amazing taco flavors, make this a complete meal with only one dirty pan. Gotta love that!


    Southwest Cornbread Skillet

    1 lb ground beef
    1 packet taco seasoning
    1/2 cup water
    15oz can corn, drained
    15oz can black beans, rinsed and drained
    1 pouch Martha White Mexican Cornbread mix
    1 egg
    2/3 cup milk

    Preheat oven to 400 degrees. Brown ground beef in cast iron skillet and drain. Add taco seasoning and water, cook on medium heat until most liquid is absorbed. Stir in corn and black beans, remove from heat. In a small bowl, beat egg and milk. Stir in cornbread mix. Pour batter over ground beef filling in skillet. Bake at 400 for 18-25 minutes or until cornbread is golden brown.

    Salsa Sloppy Joes



    Who can't resist a good sloppy joe recipe? I know I can't! They're easy, messy, and good. The perfect weeknight meal to get the family happy and fed. I saw this variation on the classic sloppy joe and simply had to try it! We're huge fans of salsa and mexican meals, so it's no wonder this one went over well in this house. These sloppy joes have a great sweet salsa flavor, double the recipe and keep it warm in a slow cooker to feed a crowd.

    Salsa Sloppy Joes

    1 lb ground beef
    1 cup good quality chunky salsa
    1 can condensed tomato soup
    1 1/2 tablespoons brown sugar
    1/2 cup sour cream
    sliced monterey jack cheese
    hamburger rolls


    Brown ground beef in skillet and drain. Return ground beef to pan and add salsa, tomato soup, and brown sugar. Cover and cook on medium low for 15 minutes, stirring occasionally. To serve, place sloppy joe filling on hamburger buns, top with a slice of monterey jack cheese, and one tablespoon of sour cream. 



    I served this with some bite sized tortilla chips and extra salsa. How cute are those blue baskets? I snagged them at the dollar spot in Target a while back. Silas loves it when I serve dinner in them! So fun.
