Hot Cheddar Mushroom Spread and a VinoVinti Review!

Mushrooms, ranch dressing, mayo, cheddar, and parmesan bake together in this addictive appetizer - perfect for salty pretzels!


SO, I have to be completely honest with you. I'm not a huge wine fan! I know, I know. My family and friends think I'm crazy, but it's always tasted too bitter and dry for me. I always end up taking a few sips from my glass and then asking for a coffee! I like sweet tasting drinks (big surprise!) and wine is definitely not very sweet, at least not to my liking.


A few nights ago I had some friends over for some appetizers and we tried out this amazing VinoVinti. This clever invention removes excess carbon dioxide from the wine leaving it with a smoother flavor. Apparently the excess CO2 is what gives the wine a bitter taste, who knew?! It's faster than decanting and much more effective than aeration. 

Plus, the packaging is so chic! You know me, I love the details. :)


You actually pour a bit out of the wine bottle, insert the ceramic rod, and attach the vacuum pump. We were actually left thinking, it had to be more complicated than that! Just pump until the bubbles come to the surface and allow them to dissipate. Here's a quick demo video:



We pumped it twice and then tried a taste.

Ok, so honestly, we did a taste-test of the bit we poured out first. Oh my goodness, what a difference! We really, REALLY love the VinoVinti. I can honestly say I actually like wine now - ha! I think I may actually take this thing to restaurants with me when I go out on a (RARE) date with the Mr. That wouldn't be weird, right?
Even better, what an AMAZING and affordable gift for the wine-lover on your list! And really, with how nice it's packaged, just tie a bow and gift tag around it and you're good to go - love it!
Alright, on to this delish Hot Cheddar Mushroom Spread - this dip was absolutely PERFECT for a wine pairing. I love that it uses pantry staple ingredients, so it's perfect to just throw together when you invite a few friends over at the last minute (cough, cough).

Hot Cheddar Mushroom Spread
2 (8 oz) cans sliced mushrooms, drained well
1 envelope ranch dressing mix
2 cups mayonnaise
2 cups shredded cheddar cheese
2/3 cups grated parmesan romano blend
pretzels or crackers for dipping

Mix together all ingredients in a medium bowl. Spread into a 9 inch pie plate that has been sprayed with non stick spray. Bake at 350 degrees for 25 minutes or until cheese is melted and spread is heated through. Serve with pretzels or crackers, and wine of course!
