Boxed brownies topped with a peanut butter cookie dough layer and mini Reese's Pieces!
So, I know that this statement will come as a real shocker, but I'm pretty much obsessed with saving money whenever and wherever I can. Ok, maybe not exactly front page news, but I really REALLY love getting a deal. For example, with clothing - my favorite place to shop is our Goodwill here in town. I'm not kidding when I say I'd rather peruse the thrift racks there - 5 minutes from my house - where I could potentially get an entire bag of (close to new) clothing for $30, as opposed to making the 20 minute drive to the mall where I would spend that for just ONE shirt. Not my idea of fun!
As far as food and groceries go, I coupon when I can, but I mainly shop at a local grocery outlet. I LOVE that place. They sell deeply discounted food that is either close to expiration date or is overstock and perfectly fine. Last week I found turkey short cuts for $0.99 per pack and the expiration date was November 10th. I mean come on, that's a no brainer!
Honestly, it's so fun as a food blogger. I see what stuff they have in that day and my brain runs wild. Last week I spotted bulk Reese's Pieces Minis for super cheap and they were so adorable, I knew I had to find something to use them with. I actually had never seen them before, but yes they are in fact made by Hershey's and they taste exactly like regular Reese's Pieces only easier to bake with. Here they are on Amazon

Peanut Butter Cookie Dough Brownies
1 pkg fudge brownie mix, cooked and cooled in a 9x13 pan
1/4 cup butter, softened
1/2 cup peanut butter
1/2 cup sugar
1 cup brown sugar
1/4 cup milk
1 tablespoon vanilla
2 cups flour
1 cup Reese's Pieces Mini baking pieces (or chocolate chips)
Cream together butter, peanut butter, sugar, and brown sugar in a stand mixer. Add in milk and vanilla, mixing well. Gradually add in the flour while the mixer is turned on low, scraping down the sides every few minutes. Spread cookie dough over cooled brownies. Sprinkle Reese's Pieces over the dough and press slightly to adhere. Refrigerate leftovers.
