Honey Dijon Chicken Salad

Shredded chicken tossed in a homemade mayo & honey mustard spread with crunchy celery and sweet Craisins thrown in the mix!




Chicken salad has always been my thing. I would take chicken salad over tuna or egg salad any day of the year. When we were just dating (and the calories didn't seem to count) Paul and I had many a date ordering sandwiches at Wawa - a popular convenience store in Eastern PA. Well I think they started as a convenience store, and quickly grew into a full service deli and sandwich shop when we were in high school. Amazing coffee, Philly soft pretzels fresh everyday, hot soups, Tastykakes, Amoroso rolls - basically Philadelphia in a store... minus the cheesesteaks. Really though, if you don't know what a Wawa is I'm very, very sorry. :)

Anyway, Paul would always order a roast beef sandwich on rustic bread with Woebler's horseradish sauce, and I would always order a chicken salad shorti sandwich. Their chicken salad was so simple, and so SO good! It's amazing how I can remember these details, but forget what I made for dinner last night. I'm getting old.

This Honey Dijon Chicken Salad is not the Wawa chicken salad I remember. But of the homemade chicken salads I've had, it is absolutely my favorite to date. I made this for my sister's baby shower on mini croissants and everyone raved about them. You will not be sorry with this chicken salad - I'm telling you!


Honey Dijon Chicken Salad

2 cups cooked, shredded chicken*
1 celery stalk, diced fine
2 green onions, sliced
1 cup mayo
2 tablespoons Dijon mustard
2 tablespoons honey
1/2 - 3/4 cup dried cranberries (Craisins)

*I shred the cooked chicken breasts in my stand mixer, works perfectly every time!

Combine all ingredients in a plastic container, making sure the ingredients are well incorporated. Cover and refrigerate at least one hour, overnight if possible. Serve cold on some crusty rolls or croissants.

  4. OMG you just made me homesick for Emmaus. I love Tastykakes and Philly pretzels and steak sandwiches and pierogies. I haven't been home in years. I need to make a pilgrimage back. And this chicken salad sounds really good. I haven't found a chicken salad recipe that I like yet.
