Creamy Cucumber Bagel Sandwiches

Cucumbers, cream cheese, green onion, and Worcestershire sauce make a tangy, tasty filling - don't skip the everything bagels!

Cucumbers are probably my favorite summer veggie. Ice cold, sliced, and dipped in some salad dressing - man that's a great snack on a hot day! I remember growing up at our house in Philadelphia, my parents' had a pretty awesome vegetable garden. I believe they had tomatoes, cucumbers, radishes (my dad's favorite), and bell peppers growing back there - I wish I had inherited their love for gardening! Though I really need to, at least with some pots on our back deck. Anyone have a successful veggie garden in pots? Inquiring minds would love to know. :)

These bagel sandwiches are perfect for summer picnics, BBQs, and parties. Actually, I think they would be great at bridal and baby showers. You probably could substitute the everything bagels for party rye or crescent rolls, but I honestly wouldn't. I think it was the perfect flavor pairing!

Creamy Cucumber Bagel Sandwiches
from The Country Cook

1/2 cucumber, peeled and chopped small
8 oz cream cheese, softened
3 green onions, chopped
1 teaspoon Worcestershire sauce
6 mini everything bagels

In a medium bowl, combine cucumber, cream cheese, green onions, and Worcestershire sauce. Cover and refrigerate an hour or more (if preparing this for a party, I would refrigerate overnight to make the flavors really come together). Serve spread on everything bagels, refrigerate leftovers.

  1. This looks great! I've had slices of cucumber on cream cheese, but never like this. Must try!

  2. First of all, everything bagels are the bomb! I LOVE those! Second of all, cucumbers are so yummy! They get sort of ignored though, you don't see them as the main ingredient very often. ;) This sounds like an awesome pairing that I can't wait to try! I have family coming into town and we're planning a picnic, I think I might make these to bring! Thanks for sharing!
