Cinco de Mayo Recipe Roundup!

Growing up, the only experience I had with Mexican flavor was a Taco Bell burrito that was too spicy. Once. I seriously don't remember any other time as a kid eating Mexican food. My parents HATED it so we never ate it. Boy did that change once I was married! Paul grew up with taco night every week and Cheesy Enchilada Hamburger Helper quickly became a staple in our newly married diet. Pretty soon, though, I tried making different Mexican meals and I'm so glad I did! Here's a roundup of some of my favorites here on Semi Homemade Mom.
