Cinco de Mayo Recipe Roundup!

May 2, 2013

Growing up, the only experience I had with Mexican flavor was a Taco Bell burrito that was too spicy. Once. I seriously don't remember any other time as a kid eating Mexican food. My parents HATED it so we never ate it. Boy did that change once I was married! Paul grew up with taco night every week and Cheesy Enchilada Hamburger Helper quickly became a staple in our newly married diet. Pretty soon, though, I tried making different Mexican meals and I'm so glad I did! Here's a roundup of some of my favorites here on Semi Homemade Mom. What will you be making to celebrate Cinco de Mayo?

Deconstructed Burrito Pizza

Salsa Sloppy Joes

Avocado Bean Dip with Baked Lime Chips

Stuffed Corn & Black Bean Quesadillas

Southwest Chicken Wraps

Salsa Meatloaf Bites

Can Can Taco Soup

Chili Cheese Nachos

Corn Chip Taco Salad

Slow Cooker Chicken Taco Soup

Bubble Up Enchiladas

Churro Waffles
