Waffle BLT with Fresh Herb Spread #EggoWaffleOff

Ok, so I'm REALLY excited about today's waffle recipe. If you're just joining in today, all week I'm sharing some new ideas on how to enjoy your favorite Eggo Waffles! In honor of Eggo's Great Waffle Off recipe contest.

Yesterday I shared a great snack idea, Apple Cinnamon Waffle Parfait. Delicious! Today's recipe is this Waffle BLT with Fresh Herb Spread... OMG! This has got to be one of the best BLT's I've ever had, if I do say so myself. The fresh herb spread is SO good and paired with the crispy waffle, it gets trapped in the little squares. The perfect amount of spread in every bite! 

As a side note, I was ALWAYS keep Homestyle Waffles in my freezer for BLTs and club sandwiches. They were perfectly crispy and just the right amount of flavor for the sandwich.

Waffle BLT with Fresh Herb Spread
makes 4 sandwiches

8 Eggo Homestyle waffles
8-12 slices bacon
2 medium tomatoes
4-6 lettuce leaves
1 cup mayonnaise
4 cloves garlic, minced
1 cup fresh basil, chopped fine
1 cup fresh dill, chopped fine

Prepare herb spread by combining mayo, garlic, basil, and dill. Cover and refrigerate. Meanwhile, place strips of bacon on a cookie sheet lined with foil. Place in cold oven. Turn oven to 400 degrees and set the timer for 17 minutes. When timer goes off, remove cookie sheets from the oven and transfer bacon to a paper towel lined plate (allow grease on foil to cool completely, then just ball up and throw out for easy clean up). Double toast waffles. Prepare sandwiches by spreading 2 tablespoons of herb spread on each waffle. Top with bacon slices, tomato slices, and lettuce leaves. Top with another waffle. Serve immediately.

The spread actually made more than needed for the sandwiches so we enjoyed the rest as a dip with some french bread. SO good!

  23. It's been years since I used lettuce on a tomato and bacon sandwich. Now I add a layer of torn up fresh basil leaves. OMG! It is soooo good. You'll love it! I promise!!
