Garden Salad & Waffle Croutons #EggoWaffleOff

Well, today is the last post of the Eggo Waffle Off recipe competition. I've had so much fun this week sharing a bunch of new waffle recipes with you all! I hope you've enjoyed it as much as I have.

This garden salad was really delicious. It had lots of tasty veggies, my favorite black beans to fill you up, and the buttery Eggo waffles in place of traditional croutons - even my kids liked this. Those amazing waffles and their little nooks and crannies!! It catches the dressing and really makes the flavors pop when you take a bite! I used ranch dressing, but feel free to use whatever dressing you have on hand. 


Garden Salad & Waffle Croutons
adapted from Dishing with Leslie

3 Eggo Homestyle waffles, double toasted
3 cups spring mix
15oz can corn, drained
15oz can black beans, drained and rinsed
1 pint grape tomatoes, halved
2.8 oz jar real bacon pieces (or 5 slices bacon, cooked and crumbled)
ranch dressing

Chop up waffles and place in large salad bowl, reserving 1/2 cup. Add spring mix, corn, black beans, bacon, and tomatoes. Toss ingredients well. To serve, place salad in individual bowls, and top with a handful of waffle croutons and ranch dressing. Serve immediately.
