Deconstructed Burrito Pizza

I really love those Pillsbury refrigerated pizza crusts and recently there was a big sale so I stocked up. I've tried making my own pizza crust, a few times actually, but you all know how I am with yeast. :/ Those refrigerated crusts are seriously a mom's best friend, just in case dinner flops or you suddenly realize someone ate ALL the [insert ingredient here]. It happens a lot around this house!

This is such a fun twist on both a burrito and a regular pizza. It's actually quite a bit quicker than making individual burritos - just toss your fillings onto a pizza crust and bake. Great way to use up that leftover rice, too!


Deconstructed Burrito Pizza


1 can refrigerated thin pizza crust
1 tablespoon olive oil
2 cloves garlic, minced
1/2 cup onion, diced
15oz can black beans, drained and rinsed
2 cups cooked rice
1 teaspoon cumin
1 teaspoon ground black pepper
1 cup salsa
1 cup frozen corn, thawed
8oz shredded monterey jack cheese

Unroll pizza crust on a foil lined cookie sheet and prebake at 400 degrees for about 7 minutes. Meanwhile, heat olive oil in skillet and add garlic and onions. Saute a few minutes until onions are soft. Add black beans, rice, cumin, and pepper and cook on low for about 5 minutes, just to heat through. Spread salsa on prebaked crust and add the bean mixture and 1 cup cheese. Top with corn and remaining cheese. Bake for an additional 8-11 minutes until the crust is browned and the cheese is melted. Slice and serve!

  1. This is an awesome idea. I can't eat normal pizza because of the sauce so this a great alternative for me.
