Churro Waffles #EggoWaffleOff

No syrup in the fridge? Make these cinnamon sugar coated Churro Waffles!

Picture this scenario in your mind, if you will: it's Monday morning and you've just realized the entire family, just off of a busy weekend, slept in and now everyone's late for work & school. You barely have enough time to gulp down a cup of coffee, let alone fix a whole breakfast so you pop those trusty Eggo waffles in the toaster. Throw them on a plate, cut them up for the kids, reach for the syrup... uh oh. What do you do now?

Unfortunately, this has played out in my house more times than I can count! I don't know what it is, but syrup is always one of the forgotten items on my grocery list - how about you? These Churro Waffles are a GREAT idea to serve your family when you're out - and don't be surprised if they ask for them next time instead. :)

Churro Waffles
adapted from Six Sister's Stuff and Chica Chocolatina

6 Eggo Homestyle waffles
1/2 cup butter
3/4 cup sugar
3 tablespoons cinnamon

Toast waffles and set aside. Melt butter in microwave, and place in a shallow bowl. Mix sugar and cinnamon and place in a second shallow bowl. Dip waffles in butter and then in cinnamon sugar, shaking off the excess. Repeat for remaining waffles. Serve immediately.

These are great with some fresh fruit - yum!!

    1. So are we, Dorothy! I think I kinda HAVE to make this on Cinco de Mayo for breakfast. :D

  8. Oh, my daughter would love these! Yum!!

  9. I was thinking if you cut the waffles into 3/4' sticks before you toast them in the toaster oven, all those edges could get nice and crunchy before continuing on with the directions. Then you could just throw them in a paper bag for the ride to work/school.
