Bananas Foster Waffles & Giveaway! #EggoWaffleOff

A while ago I asked my fabulous Facebook fans to help me along with this Eggo challenge. I was not feeling the creativity that day, and boy did they give me some great ideas for waffles! I settled on fruit, specifically bananas because that's what I had on hand.

O.M.G. I'm not even sure how I could put into words these waffles were. I had once used rum extract in a copycat Butterbeer recipe and man, that was a total recipe FAIL. In this recipe, though. Don't skip the rum extract, it totally brings the sauce to a new level! This is an amazing dessert, you need to try it this weekend!

Bananas Foster Waffles
adapted from All Recipes

4 Eggo Homestyle waffles, toasted
1/4 cup butter
2/3 cup brown sugar
2 teaspoons vanilla extract
1 teaspoon rum extract
1/2 teaspoon cinnamon
1/4 cup chopped pecans
1/2 cup pancake syrup
3 bananas, cut into 1/2 inch slices
Breyers vanilla bean ice cream

Melt butter over medium heat in a saucepan. Stir in brown sugar, vanilla, rum extract, and cinnamon. Bring to a simmer, then stir in pecans and syrup and continue simmering for about 1 minute. Stir in bananas and cook for 4 minutes, or until bananas are soft. Remove from heat, cool slightly. To serve, pour bananas and sauce over waffle and top with a scoop of Breyers ice cream. Serve immediately (makes 4 servings).

  3. Waffles-foster... yummo... So this contest has my son's name all over it. He is three and lets just say going on yea, probably 2 years now he has been OBSESSED with waffles... the ONLY thing I can get him to eat for breakfast (with fruit, yogurt and milk) but seriously it is a normal day for him to eat waffles for breakfast... nana gives in and gives him waffles sometimes for lunch... and then sometimes we do breakfast dinners and yes, you guessed it Waffles are his only request... the silly (and frustrating thing) is I try to give him diversity with flavors or taste, using pumpkin in the mix sometimes or ham... and yea... EGGOs are his favorite... I love to cook... he is the best helper with a mixer or stiring or emptying measuring cups... but nothing stands a chance against the toaster and eggs... lol... love your blog... how can I enter to win the eggo give away in my sons honor :) xoxo~ Lauren
