Apple Cinnamon Waffle Parfait #EggoWaffleOff

Apples, sweetened with brown sugar and cinnamon, layered with mixed berry waffles, and vanilla yogurt - such an easy and yummy breakfast idea!



Welcome to Waffle Week here at Semi Homemade Mom! I'm your resident Chief Waffle Officer here to give you some great recipes using one of my favorite foods... waffles of course! I'm so happy to have Eggo waffles on board.

This Apple Cinnamon Waffle Parfait is such a great, different snack to serve your family. I made two large 8 oz parfaits, but you could easily make the recipe stretch to 4 servings by using glass ice cream dishes. My kids went crazy for this! The crunch of the granola waffles, paired with the tender apples and the creamy yogurt, it was taste-bud heaven!


Apple Cinnamon Waffle Parfait

4 Eggo Granola Mixed Berry waffles, double toasted
2 cups vanilla yogurt
3 apples, peeled and cut into small chunks
1/4 cup brown sugar
dash cinnamon

Place apples, brown sugar, and cinnamon in a medium bowl. Microwave for 5 minutes until apples are soft. Set aside to cool slightly. Chop waffles into small squares. Layer 1/2 cup yogurt, 1/4 cup waffles, and 1/4 cup apples in an 8 oz glass. Repeat layers until glass is filled (this was two total layers for me). Prepare second parfait glass. Sprinkle additional cinnamon over tops of parfaits and serve immediately.
