February and March are big birthday months for us in this family. These Chocolate Milk Pancakes would be perfect for a birthday breakfast! Very chocolatey, decadent, and sweet all on their own. No syrup needed, that's for sure. Your kids will think you're the best mom ever!
Chocolate Milk Pancakes
serves 4, about 8 medium-sized pancakes total
1 cup flour
1/2 cup unsweetened cocoa powder
1 1/2 teaspoons baking powder
1/4 teaspoon salt
2 tablespoons sugar
1 1/2 cups chocolate milk
1 large egg
2 tablespoons butter, melted and cooled
3/4 cup chocolate chips
In a large bowl, combine flour, cocoa powder, baking powder, salt, and sugar. In a separate bowl, whisk together chocolate milk and egg. Add in the cooled, melted butter. Gradually add the liquid ingredients into the dry ingredients until wet, batter will be lumpy. Stir in chocolate chips and leave batter to set 5 minutes. Heat griddle on medium heat and spray with cooking spray. Pour 1/2 cup batter onto skillet and cook until surface bubbles, about 2 minutes on each side.
