Southwest Cornbread Skillet & Martha White Giveaway



If you follow me on Facebook, you may be aware a bit ago I was in the market for a cast iron skillet. I've always had the same set of Cooks Essentials cookware from QVC that I received at my bridal shower. I really can't complain, they helped me make some delicious meals over the years! But they are showing their wear, especially in my everyday 12 inch skillet. 

I settled on this Lodge 12-Inch Pre-Seasoned Skillet and let me tell you, it was like Christmas when this thing arrived! I was a little apprehensive over how to take care of it, but it's seriously not scary at all. I just wait for the skillet to cool down a bit, wipe it down a few times with a wet rag, and then rub some vegetable oil into the skillet. Done! 



I've cooked quite a bit with this skillet in the past two weeks, but I was REALLY excited to use it with some cornbread mixes Martha White gave me to try out. Your family will LOVE this Southwest Cornbread Skillet!! Just a little bit of heat, with amazing taco flavors, make this a complete meal with only one dirty pan. Gotta love that!


Southwest Cornbread Skillet

1 lb ground beef
1 packet taco seasoning
1/2 cup water
15oz can corn, drained
15oz can black beans, rinsed and drained
1 pouch Martha White Mexican Cornbread mix
1 egg
2/3 cup milk

Preheat oven to 400 degrees. Brown ground beef in cast iron skillet and drain. Add taco seasoning and water, cook on medium heat until most liquid is absorbed. Stir in corn and black beans, remove from heat. In a small bowl, beat egg and milk. Stir in cornbread mix. Pour batter over ground beef filling in skillet. Bake at 400 for 18-25 minutes or until cornbread is golden brown.
