Cherry Cheesecake Brownies
I like cherries, but I've never been a huge cherry person. I guess when it comes down to it, I always pick something with chocolate or caramel! I remember my grandmother having Turkey Hill Black Cherry ice cream in her freezer growing up, and I loved that. Paul is really into cherries, so when we got married that's really the only thing I would buy with cherries to appease him. :)
These brownies, though. Wow! I didn't realize how much I like maraschino cherries until I made these. The cheesecake filling has a bit of the juice so you even get a hint of cherry flavor with the cheesecake layer as well. If you're looking for a bake sale brownie to wow the crowd, this one is it!
Cherry Cheesecake Brownies
adapted from Betty Crocker
1 box (1 lb 2 oz) brownie mix
1/3 cup oil (I used applesauce)
1/2 cup water
2 eggs, divided
8 oz cream cheese, softened
1/4 cup sugar
1/2 cup maraschino cherries, chopped
2 teaspoons cherry juice
Prepare brownie mix with oil (or applesauce), water, and one egg as directed on box. You could easily substitute your favorite homemade brownie mix if you prefer. In a small bowl, mix cream cheese, sugar, one egg, and cherry juice. Stir in cherries until well combined. Pour half of brownie batter into a greased 9x13 baking pan. Dollop cheesecake filling over the batter. Top with remaining brownie batter. Bake at 350 for 45 minutes. Let cool completely before slicing.
