Menu Plan Monday 1/14 - Just Us Three
Paul is right now packing to spend the week in DC with a class from school. I'm jealous! We don't live very far from DC, but we've been saying for years now we'd like to go for a weekend and see the sights we just haven't gotten around to it yet. It will be a good experience for him, but I'm not looking forward to being alone here for the week! Ugh I'm tired already thinking about it.
In the mean time, sweet potatoes and beef stew are on the menu since he's not a fan of either. I'll also be trying some meals that can be frozen since we'll definitely have leftovers some nights.
Be sure to stop back tonight for my Iron Chef Mom entry, we begin again this week - I'm so excited! Don't you LOVE our new logo?! Mackenzie from Cheerios and Lattes is hosting our competition this week using the special ingredient tomatoes. Should be a lot of fun and I'm hoping to get some new ideas! Here's the plan for the week:
Alphabet Soup
Pesto Hoagie Melts
Roasted Red Pepper Sweet Potato Soup
Beef & Black Bean Tostizzas
Grandmom's Sharp Cheddar Tomato Mac & Cheese
Breakfast - Oven Omelette
Dinner - Slow Cooker Beef Stew
Breakfast - Leftover Omelette
Dinner - Salsa Sloppy Joes

Yum! I'm going to add the Baked Omelet to my master menu list. Thanks for the inspiration!
